Honey Baked Salmon

​INGREDIENTS:
  • 1 slice salmon fillet 
  • salt & pepper to taste
  • 1/4 cup butter
  • 1/3 cup honey
  • 5 cloves garlic, crushed
  • 2 tbsp lemon or calamansi juice
  • chopped parsley for toppings​ ​​​

HOW TO PREPARE:
  • Pre-heat oven to 375 degrees F. 
  • Line baking dish with aluminum foil big enough to fold over and seal to cove the salmon.
  • Lay down salmon fillets and sprinkle salt and pepper to taste.
  • In a small saucepan, melt the butter over low-medium heat.
  • Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon.
  • Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
  • Place baking dish on the middle rack and bake for 15-18 minutes.
  • Open the foil, garnish with parsley and broil for 2-3 minute to caramelize the top. 
  • Serve with steamed rice, quinoa or vegetables on the side.
  • I served mine with stir fried vegetable medley.
  • Enjoy.
