Peanut Butter Cookies with Toffee Bits Recipe

INGREDIENTS:
  • 1/2 cup shortening
  • 3/4 cup creamy peanut butter
  • 1 1/4 cups light brown sugar
  • 3 tbsp milk
  • 1 tbsp vanilla extract
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1 1/3 cups milk chocolate toffee bits, divided

HOW TO PREPARE PEANUT BUTTER COOKIES:
  • Preheat oven to 375 degrees F.
  • Mix together flour, baking soda and salt. Set aside.
  • In a large bowl, beat shortening, peanut butter, vanilla, sugar and milk until well blended.
  • Add egg; beat just until well blended.
  • Add the flour mixture; gradually beat into peanut butter mixture.
  • Stir in 1 cup toffee bits, reserve remaining for topping.
  • Drop by tablespoons about 2 inches apart onto ungreased cookie sheet.
  • Top with reserved toffee bits.
  • Bake 7-8 minutes or until set.
  • DO NOT OVER BAKE.
  • Cool 2 minutes. Remove to wire rack. Cool completely.
