Sweet Red Beans with Corn and Coconut milk

​INGREDIENTS:
  • 2 cups red beans
  • 1 cup sugar
  • 7 cups water
  • cream corn in can
  • coconut milk​​

TO PREPARE:
  • Soak the red beans in cold water for 30 minutes. Drain.
  • In a clean pot, place red beans and 7 cups of water, cover, and let it simmer at low heat for 45 mins or until the beans are soft. 
  • Add 1 cup of sugar. Stir and simmer for another 15 minutes.
  • Remove from heat.
  • Transfer 4 tablespoons of sweet red beans, 2 tbsp cream corn and 3 tbsp coconut milk in a bowl.
  • Stir and serve.
  • Enjoy!
