Crema de Fruta Recipe

​INGREDIENTS:
SPONGE CAKE:​
  •  5 tbsp butter
  • 1/2 cup milk
  • 4 tbsp sugar
  • 4 egg yolks
  • 3/4 cup cake flour
  • 1/2 tsp salt
  • 4 egg whites
  • 1/2 tsp cream of tartar
  • ​1/2 cup sugar​ ​

CREAM FILLING:
  • ​​1 cup sugar
  • 1/3 cup Cake Flour
  • 2 1/2 cups fresh milk
  • 5 egg yolks
  • ​1/2 cup water
GELATIN: 
  • 1 cup fruit cocktail juice, set aside fruit cocktail
  • 2 oz unflavored gelatin powder
  • 1/2 cup water
  • 5 tbsp sugar
  • 2 tbsp lemon or calamansi juice (optional)

​HOW TO PREPARE THE SPONGE CAKE: 
  • In a saucepan, heat the butter over low heat, add milk and sugar, stir until melted.
  • Turn off the heat, add the egg yolks one at a time and and beat for 5 seconds.
  • Add a pinch of salt and sift in the cake flour and whisk until smooth. Set aside.
  • Preheat oven to 270 degrees Fahrenheit.
  • ​In a separate bowl, whisk egg whites until foamy.
  • Add cream of tartar and continue beating.
  • Add sugar a little bit at a time until to a thick and stiff peak stage.
  • Using spatula, fold the egg whites into the batter. Mix until incorporated.
  • Pour the mixture into the two, square prepared tin with baking parchment.
  • Smooth the surface with a spatula. 
  • Bake for 40 minutes. Cake is ready if toothpick inserted comes out clean.
  • Remove from oven and let it cool.
  • Remove the paper lining. Set aside. ​​ ​

​​HOW TO PREPARE THE CREAM FILLING:
  • Blend all ingredients in a sauce pan.
  • Stir over the fire until it thickens.
  • Remove from fire and allow to cool. 

HOW TO PREPARE THE GELATIN:
  • Blend all ingredients in a sauce pan.
  • Cook in low to medium heat for about 20 minutes. 
  • Allow to cool.

HOW TO PREPARE CREMA DE FRUTA CAKE:
  • Put back one layer of cake into the baking pan.
  • Spread half of the cream filling over the cake. 
  • Top with the other cake.
  • Spread the rest of the cream filling.
  • Arrange fruit cocktail decoratively over the cream filling.
  • Cover with gelatin.
  • Chill until set.
  • Enjoy :)​
