Egg Custard Pie

​​INGREDIENTS:
  • 9" or 10"ready made pie crust 
   ( I used frozen ready made pie crust )
Filling:
  • 1 3/4 cups evaporated milk
  • 3 eggs + 1 egg yolk
  • 1/2 cup sugar  
  • 2 tbsp cornstarch 
  • 2 tsp vanilla 
  • 1 egg white

HOW TO MAKE EGG PIE:
  • Preheat oven to 350 degrees F.
  • Thaw pie crust for about 5 minutes. Poke crust several times with toothpick. 
  • In a bowl, combine eggs, milk and vanilla. Gradually add the sugar while whisking. 
  • Add cornstarch the cornstarch and whisk until all ingredients and incorporated. Set aside
  • Beat the egg white until soft peak.
  • Fold the beaten egg white into the filling mixture. 
  • Pour the mixture into the prepared crust.
  • Bake for 20 minutes. 
  • Bring down temperature to 325 deg F and bake for 30-35 minutes or until the custard is just set and the top turns brown.  The center should be a little wobbly. 
  • Remove from the oven.
  • Cool the pie in room temperature for an hour, then place in the refrigerator to cool down further. The pie is best served cold.
  • Enjoy!

* You can adjust the sugar if you prefer it sweeter.
