​Easy Baked Chicken Thighs

​INGREDIENTS:
  • 4 pieces bone-in chicken thighs with skin
  • 5 cloves garlic, chopped
  • 2 tbsp mayonnaise
  • 1 tbsp olive oil
  • 1/2 tsp  paprika
  • 1 tsp salt
  • 1/8 tsp pepper

HOW TO PREPARE:
  • Preheat oven to 375 degrees F.
  • Line a baking sheet with aluminum foil and spray with cooking spray.
  • Combine mayonnaise and olive oil. Set aside.
  • In a separate small bowl, combine paprika, salt and pepper. 
  • Marinate chicken thighs with mayo mixture and combined seasonings.
  • Set aside to marinade for at least 2 hours.
  • Arrange chicken thighs on the prepared baking sheet.
  • Bake chicken in the preheated oven until skin is crispy, thighs are no longer pink at the bone, and the juices run clear, about 50 minutes.
(An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). - optional but great to use if you have one.
  • If desired, for extra crispy skin, broil for 2-3 minutes. (Make sure to keep an eye on it to avoid burning the skin.)
  • Serve with rice or vegetables.
