Pine-Chicken Curry

​INGREDIENTS:
  • 1 1/2 lbs chicken (cut into serving pieces)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 large potato (cut into chunks)
  • 1 small can pineapple chunks
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup water
  • 2 Tbsp Fish Sauce (Patis)
  • 2 tbsp curry powder
  • coking oil

HOW TO COOK PINE-CHICKEN CURRY:
  • Rub chicken with curry powder. Let stand for at 10 minutes.
  • Heat pan with cooking oil. Saute garlic and onion.
  • Add the chicken and fish sauce to taste. Cook for 5 minutes with constant stirring.
  • Add the water and coconut milk. Simmer for 15 minutes or until the chicken is cooked.
  • Add potatoes and cook for another 10 minutes. 
  • Add the pineapple chunks. Simmer once.
  • Remove from heat. 
  • Serve hot. Enjoy!
