Lechon Paksiw

Lechon Paksiw is a dish made from left over lechon. It is cooked by simmering the meat in a sweet and tangy sauce made from soy sauce, vinegar, brown sugar and all-purpose sauce.  A delicious dish to turn your left over roasted pork. Quick and easy to make!

Thanks to my cousin Dyan for this big lechon piece she gave.  The lechon has so much flavor to it that makes this paksiw more tasty and delicious!

lechon paksiw recipe

INGREDIENTS: 
  • 3 lbs left over lechon
  • 1/4 cup soy sauce
  • 1/2 cup vinegar
  • 1 cup water
  • 1 tsp salt
  • 3/4 cup brown sugar
  • 2 1/4 cups all-purpose sauce  (Sarsa ni Mang Thomas)
  • 1/2 tbsp whole peppercorn
  • 1 head garlic, minced
  • 1/2 - 1 cup dried Banana / Lily Flowers​

Procedure:
  • Chop lechon into small serving pieces. 
  • In a pan or wok, combine soy sauce, vinegar, salt, water and sugar.  Stir and let it boil.
  • Add garlic, peppercorns, lily flower and all-purpose sauce. Simmer for 3 minutes.
  • Add left over lechon. Lower heat and simmer until lechon skin becomes very soft and sauce thickens. 
  • Best served with hot white steamed rice.
