Ginataang Manok with Quail Eggs

INGREDIENTS:
  • 1 1/2 lbs chicken (cut into serving pieces)
  • 3 cloves garlic (minced)
  • 1 onion, chunks
  • 1 large potato, chunks
  • 1 medium carrot, chunks
  • 1 can (13.5 oz) coconut milk
  • 1 tsp annatto powder dissolved in 1/4 cup water
  • 1 Tbsp Fish Sauce (Patis) 
  • 2 tbsp cooking oil for sauteing 
  • 12 pieces quail eggs, boiled

HOW TO COOK:
  • Heat pan with cooking oil. Fry potatoes and carrots. Cook until slightly tender.  Set aside. 
  • In the same pan, saute garlic and onion.
  • Add the chicken and fish sauce to taste. Cook for 10 minutes or until the chicken is tender with occasional stirring.
  • Add the coconut milk. Simmer for 10 minutes. 
  • Add the dissolved annatto mix. 
  • Add potatoes, carrots and quail eggs.
  • Simmer once.
  • Remove from heat. 
  • Serve hot.
