INGREDIENTS:
  •  1 lb Pork Stew - cut in 1 1/2 inches chunk size 
  •  large onion - chopped
  • 5 cloves garlic - smashed (Use Fresh Garlic)
  • 1 Large potato - peel your potato and chop them in chunks
  • 2 large tomatoes - chunks
  • 1  1/2 cup of "Filipino tomato sauce" (any brand)
  • 1 medium "green" & "red" bell pepper, chunks
  • 3 tablespoon of olive oil 
  • 1 cup of water
  • 1/2 teaspoon of sugar
***Note: Cut the tomato halves horizontally into slices that are as thick as you want your dice to be. Next, cut each stack of tomato slices into strips as wide as you want your dice, and then slice these strips crosswise into dice.

​PROCEDURE: 
  • Step 1: Heat the oil in a wok or heavy-based pan over medium heat. Wait about 30 seconds and add your chopped onions to the wok and saute for about 2 minutes. Add your fresh "smashed" garlic and saute until it turns slightly brown. 
  • Step 2: Add your chopped tomatoes & saute for about 2 mins.
  • Step 3: Add the Pork Stew and saute for about 5 mins. Add 1/2 cup of water. Cover and allow to simmer for another 10 minutes or until pork is tender. 
  • Step 4: Add your potatoes and cover again and allow to simmer for another 5-10 mins. or until tender.
  • Step 5: Add tomato sauce, bell peppers and allow to simmer until sauce thickens (approx. 5-7 mins).
  • Step 6: Add sugar to taste and fish sauce (if needed) the tomato sauce should already enhance the flavor. 
  • Step 7: Serve with steam rice!​
