Roasted Carrots & Sweet Bell Peppers

​​INGREDIENTS:
  • 6-8 pieces Sweet Baby Bell Peppers or 2 large Bell Peppers, cut into strips
  • 1 large carrots, cut into strips
  • 2 tbsp olive oil
  • 1 tsp dried Thyme
  • 1 tsp dried Rosemary 
  • ​salt & pepper to taste

HOW TO PREPARE:​
  • Preheat oven to 350F.
  • Prepare a sheet pan lined with foil or a baking dish large enough to fit all of the carrots and peppers in a single layer. 
  • Place carrots and bell peppers in a large bowl. 
  • Toss with olive oil, salt, pepper, & thyme.
  • Spread an even layer of your vegetables in the prepared pan or baking dish.
  • Bake for 20 minutes.
  • Serve and enjoy! ​

I served it with Baked Tilapia.
