Potstickers Recipe

I have read that you can make any filling combinations for the Potstickers so I decided to  just toss together whatever vegetables I have. I checked my backyard to see what planted veggies I have and found green onions and celery. I also have sweet baby bell peppers and carrots in the fridge and also thought of adding a little flavor by tossing some Oyster sauce, sesame oil and salt and pepper to taste. Oh boy, it did come out really really good and way better than the frozen ones I used to buy at the Asian Supermarkets.

INGREDIENTS:
  • 1/2 lb ground beef or ground meat you prefer
  • 1/4 cup onion, chopped
  • 1/4 cup carrots, chopped
  • 1/4 cup celery, chopped
  • 2 stems green onions, chopped
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • gyoza/potsticker/dumpling wrapper (Please see recipe below)

DIPPING SAUCE:
  • 2 tbsp soy sauce
  • 1 tbsp lemon or calamansi​
  • 1/2 tsp sesame oil
  • chili sauce/pepper flakes/ crunchy garlic sauce (optional)
Note: You can use pork, beef, chicken or any meat and vegetables you like ;)

PROCEDURE:
  • Combine all the ingredients together except the wrapper.
  • Wrap the meat mixture in gyoza wrapper by placing about 1 tbsp of mixture into the center of each wrapper. Using your finger, rub the edges of the wrappers with water then fold the dough over the middle and pinch while folding sides with other thumb and index finger.
  • Heat a small amount of cooking oil in a pan.
  • Add potstickers in a single layer and cook about 2-3 minutes or until golden and crisp.
  • Pour about 1/4 cup water and simmer until water is all gone.​
  • Remove from pan and serve.
  • Another way of cooking is to steam for 20-25 minutes.
  • Remove from steamer and serve with dipping sauce. 
TIPS:
To avoid sticking (if steaming), brush the steamer with some oil.

​I find it more convenient and time saving when using a store bought dumpling wrapper because it is not expensive anyway.  But if you want to make dumpling wrappers from scratch, please find the recipe below. 

Ingredients: 
  • 1  1/2 cups all-purpose flour
  • 1/2 cup warm water or more 
  • 1/2 ts salt 
  • cornstarch for dusting​ ​
Procedure: 
  • Mix salt with flour and then add water.
  • Knead for 6-8 minutes or until smooth.
  • Shape to a round ball, covered and set aside to rest for 1 hour or longer time.
  • Shape it into a large circle. Cut the circle in halves and shape each half into a long log around 3cm in diameter.
  • Then divide the long log into small dumpling dough pieces.
  • Dust with cornstarch so they will not stick together.
  • Press each dough into a round disc. 
  • Use a rolling pin to create a round shape. (Rotate the wrapper when moving your rolling pin).
  • Repeat the same process with the other dough slices.
