Roasted Vegetables Recipe

INGREDIENTS:
  • 3-4 cups Vegetables of your choice, sliced  (cauliflowers, carrots, bell peppers)
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried Thyme
  • 1 tsp dried Rosemary 
  • ​salt & pepper to taste

HOW TO PREPARE:​
  • Preheat oven to 350F.
  • Prepare a sheet pan lined with foil or a baking dish large enough to fit all the vegetables in a single layer. 
  • Place veggies n a large mixing bowl.
  • Toss with olive oil, salt, pepper, rosemary & thyme.
  • Spread an even layer of your vegetables in the prepared pan or baking dish.
  • Bake for 20-30 minutes.
  • Serve and enjoy! ​

You can also serve it with Baked Tilapia.
