GINATAANG BILO-BILO

​Ginataang Bilo-Bilo is glutinous rice formed into small balls and cooked in coconut cream. Traditionally served with just tapioca pearls and sweetened jack fruits but for this one, I added sweet potato yam and saba banana or plantains so it won't be too boring to eat.

​I used mini sago (tapioca pearls) instead of the regular size because it overpowers the glutinous rice balls which is supposed to be the highlight of this recipe.

To make the rice balls, combine glutinous rice flour and water until it forms a dough. Then take about 1/2 tbsp and shape into round balls like the photo below.

​Here in Califonia, I can easily purchase glutinous rice flour in Asian stores. You can also purchase it from Amazon.

Recipe update 3/18/19
INGREDIENTS:
  • 1 cup tapioca pearl (sago), cooked 
  • 2 cans (13.5 oz) coconut milk
  • 2 cups water
  • 3 cups glutinous rice flour & 1 1/2 cups water (to make rice balls)
  • 1 large sweet potato, cubed
  • 3 large saba/plantain/cardaba banana, cubed
  • 1 cup sweetened jackfruit, slice into strips 
  • 1/2 cup jackfruit syrup (optional)
  • 1 cup sugar 
* Note: You can cut the recipe in half if only serving for 4-5 people like how I did on the video below.

​HOW TO COOK: 
  • Prepare the rice balls by combining glutinous rice flour and water until a dough is formed. Take about 1/2 tablespoon of the dough and shape it into a ball. Set aside.
  • Cook the mini tapioca pearls (sago) by combining water and sago. Boil until the pearls are cooked or color becomes clear about 12 minutes. Drain and rinse in cold water. Set aside. 
  • In a large pot, combine 1 can of coconut milk and water. Stir occasionally until it boils.
  • Drop in the dough (rice balls). 
  • When the dough starts to float, add the sweet potatoes and cook until half-cooked.
  • Add saba (plantain) bananas and continue cooking for 4 minutes.
  • Add the sweetened jack fruit, 1 can coconut milk, cooked tapioca pearl(sago) and sugar. 
  • Cook for 5 minutes or until the yam is soft and the sauce is slightly thick. 
  • Serve warm or cold.
  • Enjoy!
