Recipe update: 4/8/19
​INGREDIENTS:
  • 1  1/2 - 2 lbs pork belly or pork shoulder, cut into small pieces
  • 1 head garlic, pounded 
  • 5 pieces bay leaves
  • 1/2 tbsp whole peppercorns
  • 1/2 cup soy sauce *
  • 1  1/2 cups water
  • 1/4 cup vinegar 
  • 2 tbsp cooking oil ​ ​
​* I find Datu Puti soy sauce dark in color and Kikoman very light but tasty. 
 ​HOW TO COOK PORK ADOBO:
  • Marinate pork meat, soy sauce, bay leaves, whole peppercorns & garlic for at least 1 hour in a pan or wok. I suggest to marinate overnight. It's worth it :)
  • After marinating, add water and vinegar.
  • Simmer for 30-45 minutes or until pork is tender and sauce is almost dry.​
Below procedure is optional but please try and see for yourself how your adobo actually taste better even without the sauce.
  • Turn off the stove and remove marinade (sauce) leaving the meat, garlic & bay leaves in the wok.
  • Turn the stove to medium heat, add a small amount of cooking oil and stir fry the meat in the wok for 5-10 minutes.
  • Serve with hot steamed rice.
