No Bake Crema De Fruta

Recipe update 3/17/19
This cake does not need to be baked. I used graham crackers as a base and use it in between the filling. The filling ingredients for the cream filling will soften the crackers and will taste like a cake.
​Cooking the cream filling is very easy. Just combine all the ingredients together and cook in low heat until thick. 

REcipe Suggestion: VANILLA CUPCAKES

​I suggest to use the Filipino brand of graham crackers called "MY San". It is darker and much tastier than the american brand.  These crackers will need to be lined up at the bottom of the pan. I used an 8 x 8 square pan. Feel free to cut the crackers to fill the gap in order to fit the size of the pan. Place the cream on top of the crackers, then line another batch of crackers then repeat the procedure until filling has been used. Top with your favorite fruits like fruit cocktail and/or sliced peaches. You choice :)

crema de fruta recipe

​​INGREDIENTS:
  • 1/2 cup all purpose flour
  • 3/4 cup sugar
  • 1 can (12 oz) evaporated milk 
  • 1 cup water
  • 6 egg yolks, beaten
  • 2-3 tbsp melted butter
  • graham crackers
  • unflavored gelatin
  • fruit cocktail and/or peaches, pineapples, etc.​​​
* Adjust the sugar to 1 cup if you prefer a sweeter cream filling.
* Add 1 tsp vanilla extract if desired

​PROCEDURE:
  • Combine flour, sugar, water, evaporated milk, egg yolks and butter in a saucepan until well mixed. 
  • Simmer in low heat while stirring constantly until the mixture thickens. Remove from heat.
  • Arrange the first layer of graham crackers in an 8 x 8 square pan.
  • Spread the prepared mixture over the graham crackers.
  • Top the mixture with another layer of graham crackers. Repeat until 3 to 4 layers depending on your size preference.
  • Top with fruit cocktail and/or peaches. 
  • Cook the gelatin as instructed in the label and pour it over the graham and fruit layer. For the Ladies Choice brand of clear gelatin, Combine 1/2 cup water and 1 /2 tbsp gelatin powder in a sauce pan. Stir until powder is dissolved. Let it boil. Remove from heat.
  • Pour the gelatin over the top of the cake.
  • Let it cool and refrigerate.
  • Best served when chilled.
  • Slice and enjoy.
