COCA-COLA BBQ RIBS

​Barbeques are popular during summertime. It is an activity carried out on beaches, in parks, while camping, or even at home when you have visitors come over to eat al fresco, on your patio or in your yard. Barbeque is a method of cooking that uses both fire and smoke to cook the food. It's the smoke that actually gives the food a distinct flavor. 


​You may be asking what kind of outlandish recipe is this? I promise you though that this is a good one

Why Coca-cola? Well, firstly, it's been proven that carbonated drinks contain the acidity to break down enzymes and proteins. The fizz, or the bubbles you see, is carbon trying to escape. This gives pressure. Therefore, carbonated drinks like Coca-cola are great meat tenderizers. Not only does it tenderize meats, but it also contains enough sugar to sweeten the meat and give it a gorgeous, caramelized char when grilled or barbequed. It also helps retain the moisture inside the meat. This recipe requires a little less sugar than other recipes.

​There are different kinds of barbeque marinades , but this is probably the easiest yet flavorful of the ones I've tried. It's a budget-friendly recipe which you can use if you decide to start a business selling barbeque. Your customers will surely enjoy the taste and texture of this one. 


​Everyone loves barbeque! So, I encourage you to try this recipe out. You will have delectable, finger-licking goodness in no time!

COCA-COLA BBQ RIBS RECIPE

Ingredients:
FOR THE RIBS:
  • 2 lbs or 1-kilo pork short ribs or baby back ribs
  • 2-liter bottle Coca-Cola 
  • 1 onion, quartered
  • 4-5 cloves garlic, peeled and mashed
  • 3-4 pcs bay leaves​
  • 2 tsp whole black peppercorns
  • salt and pepper to taste if desired

FOR THE SAUCE:
  • 1/2 cup unsalted butter
  • 1 cup coke
  • 1 cup banana sauce (banana ketchup) I used hot & spicy
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup dark brown sugar
  • 3 tsp Worcestershire sauce
  • 1 tbsp Dijon or yellow mustard
  • salt and pepper to taste

​PROCEDURE:

  • Set aside 1/2 to 1 cup Coke from a 2-liter bottle of Coca-cola.
    In a large pot, put in your short ribs. Pour into this the remaining Coke in the bottle. Add in the onion, garlic, peppercorns, and bay leaf (laurel). Simmer this mixture over medium-high heat. Before boiling point, skim off the scum that forms. Continue boiling over medium-low heat for 1 hour or until meat pulls away from the bones. Remove the short ribs from the pot and place them in a tray for basting. 
  • Prepare the BBQ sauce. In a saucepan, melt the butter. Pour in the Coke that you set aside. Add to this mixture the brown sugar and banana catsup. Depending on your taste and preference, you can use plain or spicy banana catsup. Season the mixture with garlic powder, onion powder, Worcestershire Sauce (may be substituted with low-sodium soy sauce), Dijon or Yellow mustard (or substitute this with turmeric). Stir and let boil. Reduce heat and simmer for 30 minutes or until the sauce has reduced and become a slightly thick consistency. Stir occasionally. Season with salt and pepper.
  • Baste your tender short ribs liberally with this sauce before grilling. Grill until charred, around 10 minutes on each side. Baste with the remaining sauce each time you turn over.

TIPS & NOTES

  • Carbonated drinks are great marinades for meat
  • Marinating meats in carbonated drinks like Coca-cola will result in melt in your mouth goodness
  • When lighting your coal for grilling, do it with your lid off or grill uncovered. This is to allow air to quickly make the coal burn.
  • Cover after it has been lit and starting to burn so that heat increases making coals burn faster. It will take 20 to 30 mins before it's ready. 
  • Be patient
  • Coal is ready for grilling when you see it turn gray ashes on its surface.
  • Barbeques go great with dips or pickled garnish. So, make sure to make some before you start grilling! 
  • Basting sauce can be prepared ahead of time. Store in an airtight container and refrigerate for no more two weeks.
