​Kababayan Bread is a popular Filipino sweet bread being sold in many bakeries in the Philippines.

These Filipino muffins are super easy to make. Process is so simple. Just combine the wet ingredients and the dry. Whisk them together and transfer to greased muffins. Bake at 350 F for 20-25 minutes and voila it's done!

KABABAYAN BREAD RECIPE

Ingredients:
  • 1 1/2 cup all purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda 
  • 2 eggs
  • 3/4 cup evaporated milk
  • 1/2 cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt

Procedure:
  • Preheat oven to 350 F.
  • In a mixing bowl, whisk together eggs, evaporated milk, vegetable oil and vanilla extract. Set aside.
  • In another bowl, combine flour. brown sugar, baking powder, baking soda and salt. Stir until fully incorporated.
  • Add the milk mixture. Whisk until well combined and smooth.
  • Grease muffins pans with oil or butter.
  • Using an ice scream scoop, transfer the mixture into the greased muffin pan. 
  • Bake for 20-25 minutes or until toothpick inserted comes out clean. (Always check before the set time as oven temp varies.) Do not over bake. 
  • Remove from oven and cool on wire rack.
  • Serve and enjoy.
