NO-BAKE EASY CAKE

​We all love a good dessert, and we all want to create desserts the easy, no-fuss way. It doesn't take a good pastry chef to create wonderful desserts such as this. Cakes are probably the most popular dessert, aside from flans.

Cakes are a modification of breads and are a lighter and tastier version. Cheesecakes are a type of cake that uses cream cheese, and is a heavier consistency than a flan. Cheesecakes are often garnished with glazed fruits that add to their flavor. Cakes in general however, are decorated with icing, ganache or fondant.

​Imagine combining all those good qualities in a dessert. It would turn out a very delectable and delicious dessert and will satisfy our cravings for sure!

Here is another no-bake dessert that you will surely love. It is so easy to make. All you need to do is whip up the filling or icing and layer it on top of broas or lady fingers and top with glazed fruits if desired. I included in this recipe how to make glazed fruits. Garnish your cake with chocolate shavings, because who doesn't love chocolate?

NO-BAKE EASY CAKE RECIPE

  • 8 oz softened cream cheese
  • 1 teaspoon + 2 teaspoons vanilla
  • 1/4 cup + 3/4 cup powdered sugar
  • 2 cups heavy cream
  • 20-25 pieces Broas or Ladyfingers
  • 2 cups fresh milk
  • Chocolate shavings
  • Powdered sugar and cocoa for dusting
GLAZE:
  • 1/3 cup pineapple juice 
  • 1 1/2 teaspoon cornstarch
  • 2 tablespoons granulated sugar 
  • 2 teaspoons lemon juice 
Procedure:​
  • In a mixing bowl, beat the softened cream cheese with a mixer until smooth and creamy. Add 1 tsp vanilla and 1/4 cup powdered sugar and mix well. In a separate mixing bowl, beat the heavy cream for 1 minute or until bubbly. Add 3/4 cup powdered sugar and continue beating until thick or reaches the medium to stiff peak stage. Add the cream cheese mixture and beat until just combined. Do not overbeat.
  • In a bowl combine milk and 2 teaspoons vanilla and stir well. Line an 8- or 9-inch baking pan with parchment paper. Dip your broas in milk and arrange in a pan. Spread evenly a liberal amount of the cream and cream cheese mixture. Repeat these two steps, making sure to smoothen the top layer with a spatula. Chill for 6 hours or overnight to set.
  • Remove from the pan using the flaps of your parchment paper to easily pull the cake out. Frost the sides with your leftover cream and cream cheese mixture. Cover with chocolate shavings on all sides. Dust powdered sugar down the middle of your cake. Cut parchment or wax paper into a triangle and place it on top of the powdered sugar area. Then dust the remaining sides with cocoa powder. Cut parchment paper from the sides underneath your cake and clean.​ ​
  • ​​Glaze a few strawberries and blueberries of choice for toppings. This step is optional. 
  • Use 2 teaspoons of your pineapple juice to dilute the cornstarch and make a slurry. Over medium heat, pour the remaining pineapple juice and cornstarch slurry into a saucepan. Add 2 tablespoons sugar and stir. Cook for around 5 minutes or until slightly thick. Remove from heat and add 2 teaspoons of lemon juice. Mix and let cool. Spread on fruits using a basting brush. 
  • Remove the triangular strip and decorate it with glazed strawberries and blueberries.
