PORK ADOBO WITH SPRITE AND OYSTER SAUCE

Adobo is one of the most popular Filipino dish. Pork is the most common meat but you can also make it using Chicken. This stewed dish has a balance of salty, sweet, sour, savory and perfectly tender simmered in Sprite.
​That's right, this is different from the typical Adobo you know. Instead of water, itis simmered in its' own marination and lemon-lime soda (Sprite or 7 Up) which gives it some sweetness and tanginess when oyster sauce is added. I thought of combining both to make a perfect Adobo.

Adobo is best served with plain white rice. I love mine served with eggs as well. But I made Adobo fried rice as I happened to have leftover rice in the fridge.
​After cooking the Adobo, your work will have some seasonings and or extra sauce sticking on it so please do not wash it off with water and throw away those good flavors. Just add the rice and stir until rice is well incorporated with the leftover sauce and voila, you now have Adobo Fried Rice.

pork adobo with sprite and oyster sauce recipe

Ingredients:
  • 2 lbs or 1-kilo pork meat (shoulder, butt, and or pork belly)
  • 1/2 cup soy sauce
  • 1 head chopped garlic plus more for sauteing
  • 1/2 tbsp whole peppercorn
  • 3 pieces bay leaves
  • 2 cups Sprite or 7Up
  • 1/4 cup vinegar
  • 2 tbsp oyster sauce

Procedure:
  • In a bowl, combine pork meat, soy sauce, garlic, whole peppercorns and bay leaves. Refrigerate to marinate for at least 4 hours. Turn at least once during marination. 
  • Transfer to a medium wok then add sprite and vinegar. Do not stir. Cover and let simmer for about 45 minutes or until fork-tender. Remove the cover and continue simmering, stirring occasionally until sauce is reduced.
  • Remove the meat and remove the extra sauce. Leave some oil but do not discard the extra sauce.
  • Add garlic and saute' until fragrant. Bring back the meat to the wok, stir and cook for about 5 minutes. 
  • Add the oyster sauce and extra sauce. Continue cooking for another 5 minutes.
  • Remove from the pan and transfer to a serving bowl. 
  • Serve with rice and boiled eggs if desired.
  • Enjoy!

How much vinegar? It wasn’t included in the ingredients but mentioned in the procedure.

What heat level should we leave it at for the 45 min simmer? Looks delicious and can’t wait to try!!

Can we use apple cider vinegar?

I haven't tried. Apple cider has a distinct sweetish-tart or fruity taste to unlike regular vinegar which is more of sour that balances with the soy sauce. Not sure if there will be big impact on the final product's taste.
