pudding muffins

​This recipe was inspired by the famous tele serye  in the Philippines titled  "Make it With You".  The main characters made a delicious pudding that looks like a muffin. The main ingredient are scrap breads or leftover bread from the Pande Tsalap which is the name of the bakery.  The traditional Filipino pudding is usually baked in a pan and results in a firm pudding cake. The one on the scene was baked in a cup instead. Since seeing that video, me and my niece didn't stop putting all the ingredients together until we get the right recipe.

​This one resembles the one they made from the famous television series. A pudding muffin so special because of added mango jam and red wine to it. Super moist and delicious like eating a better version of banana bread.  It is not overly sweet like other muffin recipes out there. Feel free to add another 2 tbsp or more if desired.  Give this recipe a try and I promise you won't regret it.

pudding ala pande tsalap (make it with you) recipe

​Ingredients:
  • 3 cups bread cut into small pieces
​             (I used Pandesal ) 
  • 1/2 cup milk (fresh or evaporated)
  • 1/3 cup butter, melted
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/3 cup mango jam
  • 1 tbsp red wine
​Procedure:
  • Preheat oven to 375 F.
  • Cut left over or scrap bread into small pieces. I used Pandesal but you can also use monay or sliced breads.  Makes about 3 heaping cups.
  • Microwave the butter for about 30 seconds. Achieve a slightly thick butter but not too thin like oil. (Not too melted.)
  • In a large bowl, combine bread, milk, butter, all purpose flour, sugar, baking powder, baking soda, salt and eggs. Mix together until fully combined. You can use your clean hands to mix or use a spatula.
  • Add mango jam and red wine. If red wine is not available, you can substitute it with vanilla instead. Mix until all ingredients are fully incorporated. 
  • Divide the mixture evenly into 9 baking cups. 
  • Bake for about 25 minutes or until toothpick inserted in the middle comes out clean.
  • Cool on wire rack.
  • Serve and enjoy.
  • Makes 8-9 pudding muffins.

Recipe notes:
  • This recipe can be baked without a liner using a muffin or cupcake pan. Greasing is not required.
  • If red wine is not available, you can substitute it with 1 tsp vanilla.
  • Mango jam can be replaced with apricot, orange or fruit jam of choice. Mango was chosen for this recipe to resemble the one from the television series.
  • You can use loaf bread of plain hamburger ban (no sesame seeds) or any plain bread.

Can you use ube Jam?

I think you can but I suggest to u use light colored jams like peach, apricot, orange marmalade etc. Also UBE is slightly thicker than mango jam and might have an effect with the moisture and texture.

Yes but muffins will be slightly darker in color but will not be a big deal.
