Roasted Chicken

Who doesn't like Roasted Chicken? They are inexpensive, easy to make, and super delicious. It works with any dipping sauce, be it ranch, gravy, all purpose sauce (Filipino liver sauce - Sarsa ni Mang Thomas) or banana catsup. But whatever sauce you choose, it wouldn't matter because if you try this recipe, I don't think you will need any dipping sauce. The skin is well marinated with the simple homemade marinade and using a turbo broiler to roast it made the chicken much better than deep frying.  Tender, juice and flavorful! A recipe that you must try.

Simple process here. Pat the chicken dry and place the garlic, onion and lemon grass inside the chicken. Then, rub the chicken with onion powder, pepper, garlic, calamansi or lemon juice and soy sauce. Place the chicken inside a zip bag and marinate for at least 6 hours. Broil for 350 F for at 40-45 minutes or until the skin is golden and turning the chicken at least every 15 minutes. Make sure to keep an eye on the chicken as the broiler may burn the skin. roasted chicken recipe

Ingredients:
  • 1 whole chicken
  • 1 whole small or medium red onion
  • 1-2 stalks lemongrass, trimmed
  • 1 whole garlic, chopped, divided into two 
  • 1 tbsp onion powder
  • 1/2 tbsp ground pepper
  • 2 tbsp calamansi or lemon juice
  • 1 1/2 cups soy sauce

​Procedure:
  • Place the whole chicken on a large tray and pat it dry.
  • Place the onion, garlic and lemongrass inside the chicken.
  • Marinate the skin with onion powder, ground pepper, calamansi or lemon juice, soy sauce and garlic. 
  • Tie the chicken legs with a kitchen twine or lemon grass leaves.
  • Transfer to a zip bag  and marinate for at least 6 hours. 
  • Set the turbo broiler to 350 F. 
  • Place the marinated chicken inside the broiler and roast for 40-45 minutes turning the chicken at least every 15 minutes. Make sure to keep an eye to avoid burning the skin. 
  • Remove from the broiler, slice and serve with your favorite dipping sauce.
  • Enjoy.
