Shrimp sinigang

Sinigang na Hipon or Shrimp Sinigang or Shrimp in Sour Soup is just one of the many varieties of Filipino Sinigang recipes. But Sinigang na Hipon is one of easiest and quickest dish you can make. Why? First, quickest because shrimp cooks very quickly. Once you drop it in cold water, it will be cooked in no less than 2 minutes. Second. easiest because once the shrimp is cooked, add the seasoning powder, fish sauce or salt, then immediately add the vegetables. Cover and turn off heat. Vegetables will be cooked in the hot soup while covered. 

​Below's photo is a list of its ingredients. For the veggies, you can choose any vegetables you like e.g. kangkong, okra, sitaw, labanos etc. For Shrimp Sinigang, Bok Choy and chili pepper leaves are the only two vegetables that I like aside from the chili pepper.

Tamarind soup base is the main ingredient you need in order make sinigang. Tamarind boiled in water then mashed to drain the liquid can be made if the seasoning mix is not available. But so you know that this store-bought tamarind powder is inexpensive and very convenient to use. I sugges to use it if you'd like to try this recipe.

So, have your freshly cooked rice ready before making this Shrimp Sinigang.

SHRIMP SINIGANG RECIPE

  • 6 cups water
  • 2 lbs shrimp
  • 1 medium onion, sliced
  • 2-3 medium tomatoes, sliced
  • 4-5 tbsp tamarind soup base powder mix  or 1 1/2 packets sinigang mix (adjust acordingly)
  • 2 tbsp fish salt to taste 
  • 1 cup chili pepper leaves
  • 3 bunches bok choy leaves or other vegetables you like
  • chili pepper (optional)

Procedure:
  • ​In a large pot, boil water.
  • Add onion and tomatoes. Cover and boil for at 3 minutes.
  • Add the shrimp. Simmer until shrimps are cooked. Do not overcook. Shrimps cook very quickly.
  • Add the tamarind seasoning powder, fish sauce and chili pepper. Stir and cook for 30 seconds.
  • Add the vegetables. Submerge the vegetables in soup. Cover the pot and turn off the heat.
  • Serve with steamed white rice.
  • Enjoy.

Instead of just using plain water, I usually use rice water (2nd rinse when washing raw rice before cooking it).
