Adobong Sitaw is one of the easiest and most delicious dishes you can make! A favorite homecooked meal prepared by many Filipinos! The good thing about this dish is that you can play with the meat. You can add pork belly like I did, or you can add ground meat instead, you can use shrimp or firm tofu or tokwa if you like.
This savory dish won't be good if you don't have the right measurements for the sauce. Adobo needs a perfect balance of flavors or else it will be too salty, too sour or bland. This recipe I have is my moms and I'm telling you it's really good.
I love using pork belly when making adobo. You can also use pork shoulder of butt part but fats are needed to make a good sauce but as mentioned above, if you want a healthy version you can add firm tofu then add 1 pork cube to add some flavors to the sauce.
