ADOBONG SITAW WITH PORK

Adobong Sitaw is one of the easiest and most delicious dishes you can make! A favorite homecooked meal prepared by many Filipinos! The good thing about this dish is that you can play with the meat. You can add pork belly like I did, or you can add ground meat instead, you can use shrimp or firm tofu or tokwa if you like.

​This savory dish won't be good if you don't have the right measurements for the sauce. Adobo needs a perfect balance of flavors or else it will be too salty, too sour or bland. This recipe I have is my moms and I'm telling you it's really good.

I love using pork belly when making adobo. You can also use pork shoulder of butt part but fats are needed to make a good sauce but as mentioned above, if you want a healthy version you can add firm tofu then add 1 pork cube to add some flavors to the sauce.

ADOBONG SITAW RECIPE

Ingredients:
  • 1/2 lb or 1/4 kilo pork belly, cut into strips
  • 1 bunch, about 15-20 pieces strands of long beans
  • 4-6 cloves garlic, chopped
  • 1 small onion, sliced
  • 1 cup water
  • 1/2 cup soy sauce
  • 1/3 cup vinegar
  • 2-3 tbsp cooking oil

Procedure:
  • In a large pan or wok, heat cooking oil. 
  • Add garlic and cook until fragrant.
  • Add onion and cook until soft and translucent.
  • Add pork belly and cook until pork turns brown. 
  • Add water and soy sauce then stir.
  • Add vinegar. Do not stir. 
  • Cover and simmer for about 10 minutes.
  • Add long beans and cook for another 5 minutes or until beans are tender.
  • Serve with hot steamed rice.
  • Enjoy!
