​Fried Banana bread that is moist inside and with a crunchy coating with a hint of coconut. Quick and simple to make and almost taste like a banana bread or muffin. Best served while warm. It can be eaten alone or drizzle with chocolate or dust with powdered sugar.

​If you have no oven or would like to make easy treats for the kids, then this recipe is right for you. Or if you have overripe bananas and make use of them, try this one out and let me know.  On this recipe, can use a regular banana or plantain (saba) banana. Overripe is better as they are tastier and can be easily mashed.

​A recipe that doesn't require egg or milk. Powdered sugar can also be adjusted as well.  I only used 1/2 cup powdered sugar to make a banana paste because I like drizzling it with chocolate syrup but you can also make it to 3/4 cup if you prefer it sweeter. It will depend on how you will serve it.

Ingredients:
  • 3 large overripe banana (regular or 6-7 pieces plantain), sliced
  • 1/2 cup powdered sugar
  • 1 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon powder
  • 3 tbsp dessicated coconut
  • chocolate syrup for drizzling or powdered sugar for dusting
Procedure:
  • Combine sliced bananas and powdered sugar in a blender. Blend or mix until fully incorporated and becomes a paste. Set aside.
  • In a bowl, combine all purpose flour, baking soda, nutmeg, cinnamon powder and dessicated coconut.
  • Add the banana paste. Stir until well combined.
  • Heat cooking oil in a pan.
  • Scoop about 1 tablespoon full  of mixture and drop into hot oil.
  • Deep fry until golden about 3 minutes.
  • Remove from pan and drain on paper towels.
  • Serve while warm. 
  • Drizzle with chocolate syrup or dust with powdered sugar if desired. 
  • Enjoy.
Recipe yields 12-15 pieces.
Adjust the powdered sugar according to sweetness preference.
