pasti Crinkles

Perfectly soft, moist and chewy Chocolate Crinkles. Traditionally served during holidays but are actually great any time of the year. It's name was derived from it's crackled top.

​Pastillas is a combination of two parts condensed milk and one part powdered milk. For this recipe, I divided the mixture in half and added ube flavor on the other half. The ube is just perfect with these moist crinkles.

INGREDIENTS:
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Cocoa Powder 
  • 1/3  cup granulated sugar 
  • 2 tbsp brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs, room temperature  
  • 1 tsp vanilla extract
  • powdered sugar for coating
For Pastillas: 
  • 1/2 can condensed milk
  • 1 cup powdered milk (adjust accordingly) 
  • Ube flavor

Procedure:
  • ​​Combine flour, baking powder and salt. Sift and set aside.
  • On a separate bowl, Sift together cocoa powder, granulated sugar and brown sugar.
  •  Add vegetable oil and vanilla.
  • Add eggs, one at a time. 
  • Add in flour mixture. Mix until well combined.
  • Cover the dough and chill or freeze for at least 4 hours or overnight.
  • Preheat oven to 325 deg F.
  • Scoop 1/2 or 1 tbsp of dough and shape into balls by using your palm. ​
  • Coat in powdered sugar then place on baking sheet greased or lined with parchment paper spacing them 2-inches apart. 
  • Bake for 6 to 8 minutes or until nearly set - they should be soft when touched and should appear slightly under-baked. (Always check before the set time as oven temp varies.) Smaller crinkles will need less time in the oven.
  • Allow to cool a minute or two on the sheets before transferring to a wire rack to cool completely.
  • Pipe pastillas filling at the bottom of the cookie and place another cookie on top of the filling.​
  • Serve and enjoy :)
