BANANA DROP COOKIES

Are you tired of making Banana Bread just to use your overripe bananas? Make Banana Cookies instead. This recipe is perfect for those who loves soft, light and fluffy cookies. It's like eating banana bread in a cookie form.

This is not actually my first time to make Banana cookies. I've made Banana Chocolate Chip Cookies before but that one has no eggs, so I thought of making this one instead. I also made the cookies smaller and played with the toppings by adding different ones in every bake I make.

I made plain, white and chocolate chips, walnuts and my favorite were the combination of walnuts and chocolate chips. I just noticed white chocolate chips brown faster but it's good as well.

This recipe yields about 96 small cookies. You can, actually halve the recipe if you think this recipe yields too many.  Give it a try and let me know what you think by leaving a comment below. Enjoy!

banana drop cookies RECIPE

Ingredients:
  • 2 1/3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon powder
  • 1 cup sugar
  • 2/3 cup unsalted butter, softened at room temperature
  • 1 tsp vanilla
  • 1 cup banana, mashed well
  • 2 large eggs, room temperature
  • chocolate chip and walnuts for toppings

Procedure:
  • In a small bowl, combine flour, baking powder, baking soda, salt and cinnamon.
  • Cream the butter then add the sugar. Beat until light and fluffy. 
  • Add eggs one at at time beating well after each addition.
  • Stir in the banana.
  • Slowly add the dry mixture into wet. Chill at least 30 minutes.
  • Preheat oven to 375F. 
  • Drop about 1 tbsp sized balls of dough two inches apart on cookie sheets. 
  • Top with nuts or chocolate chips or any toppings of choice.
  • Bake for about 10-12 minutes or until browned.
  • Cool for 2 minutes in the pan then transfer to a cooling rack to cool completely.
  • Enjoy! 
  • Recipe yields about 96 cookies.
