Here's a simple and delectable Banana Leche Flan. So easy to make and loaded with banana flavor. Yes with real banana and not just extract from a bottle of McCormick flavor. I've been thinking of what else I can make use of the four overripe bananas sitting on our table. I've done different kinds of banana bread. I've baked banana bars, banana cookies, etc., but I haven't tried turning it into a flan.

I adopted this recipe from my Cream Cheese Flan and Caramel Bread Pudding recipes. They were one of the great desserts I've made so I knew this will be a good one as well. All I did was actually experiment using mg 4 large overripe bananas which was about 4 cups when mashed well. I used all of them and just added eggs, milk, vanilla and condensed milk. The only difference I made with my other flan recipes was I only used half of the can of condensed milk. Bananas are already sweet so why use the whole can right?

This recipe also uses whole eggs and not just the yolks like the traditional leche flan.  What I did was whisk the eggs with the evaporated milk then add the vanilla and condensed milk followed by the bananas that I mashed really well. You can also use a blender when combining the ingredients but using a blender always results to a mixture full of bubbles because of of the eggs being mixed too much so I chose the manual method. I also strain the mixture to make sure the bananas are well pureed or incorporated with the mixture to achieve a nice and smooth flan.

The result? So good! Not overly sweet and you really need to drizzle those caramelized sugar on top before serving. Oh and one slice is not enough so I must warn you! Try this recipe and let me know what you think by leaving a comment below. Enjoy! ​

BANANA leche FLAN RECIPE

Ingredients:
  • 1 cup granulated sugar
  • 5 large eggs
  • 1 can, 400 ml/12oz evaporated milk
  • 2 tsp vanilla
  • 7oz or half can of 14oz condensed milk
  • 4 large overripe bananas, about 2 cups when mashed well

Procedure:
  • In a non-stick pan, add sugar. Cook over medium low heat while stirring occasionally. When almost all of the sugar is melting, lower the heat and continue caramelizing the sugar until amber in color.
  • Remove from heat and pour the hot caramel into the bottom of an 8-inch pan. Swirl the pan to spread evenly. Set aside and cool completely.  Set aside and cool completely.
  • In a large bowl, add eggs and milk. Beat or whisk well.
  • Add vanilla, condensed milk and mashed bananas. Whisk or beat until fully combined.
  • Pour the mixture through the strainer and continue to mash the bananas until you get a nice and smooth flan mixture. This process will get rid of some chunks of mashed bananas in the mixture.
  • Transfer the mixture into the pan with caramelized sugar.
  • Cover the pan with foil.
  • Heat water in a steamer about 2 inches high. 
  • Steam for about 45 minutes to 1 hour or until toothpick inserted comes out clean.
  • Remove from steamer. Let it cool completely and refrigerate for at least 4 hours.
  • Run a knife or metal spatula around the edges, place a large plate on top then invert and lift the pan. 
  • Slice and serve. Enjoy!

RECIPE NOTES:

  • When caramelizing the sugar, make sure to use a non-stick pan. Melt over medium heat while stirring occasionally. Do not over stir. Stir just enough to spread the sugar that hasn't melted. When half of the sugar has melted, lower the heat and continue caramelizing the sugar until amber in color. 
  • Make sure to use overripe bananas.  Yes, overripe with dark spots. They are sweeter and can be mashed really well. 
  • You can use the whole 14oz can of condensed milk if you like it sweet. 
  • A blender can also be used to combine all the ingredients. If it foams up, make sure to remove or discard the foam before transferring to the pan.
  • ​If you don't have a steamer, this can be baked at 375F/190C (pan placed on a larger pan with hot water, one-inch high the sides of the small pan) for about 45 minutes to 1 hour or until toothpick inserted comes out clean.
