brazilian cheese bread (Pão de Queijo)

These Brazilian Cheese Breads or Pão de Queijo are so delicious and super easy to make. Chewy and cheesy little balls made from tapioca starch, cheese, milk, egg and oil. The first time I tasted this at a Brazilian steak house made me think what it's made of because it is sticky and loaded with cheese. A bread so addicting that you won't stop eating them. Please know that these delicious breads are best eaten when warm... right when out of the oven. So, be extra careful and don't get too excited as it might burn your lips. I suggest to break them into two pieces and let the steam come out.

You can make the batter ahead of time. Refrigerate and bake them next day. Leftovers can also be warmed in the microwave oven for 10 -12 seconds each piece or place in the oven to warm up. Brazilian cheese bread recipe

Ingredients:
  • 3 cups  tapioca starch or tapioca flour
  • 1 tsp salt
  • 1 tbsp  baking powder
  • 1/2 cup vegetable oil
  • 2 eggs, room temperature, beaten
  • 1 cup whole / fresh milk
  • 1/2 to 3/4 cup  grated parmesan cheese
  • ​1/2 cup shredded mozarella cheese

Procedure:
  • Preheat oven to 350°F and grease the mini muffin / cupcake pan with oil. 
  • In a large bowl, combine tapioca starch, salt and baking powder. 
  • Add oil, beaten eggs, milk and stir in until the dry ingredients are well moistened.
  • Add the parmesan and mozzarella cheese.
  • Transfer into greased muffin tins.
  • Bake for 15-17 minutes or until top starts to lightly brown. Make sure not to over bake.
  • Enjoy them right out of the oven. They are best eaten when warm.
  • Recipe yields about 60-65 Cheese Breads.

Hi! How long can you keep the batter in the ref? I plan to bake the 24 pieces first and store the leftover batter for later. Will it be better to put it in the freezer?

Hi. I haven't tried refrigerating the batter as I bake it right away.
