California Sushi Bowl

This Sushi Bowl is so easy to make and very delicious! I love it so much that my husband and I told ourselves, no more sushi rolls for us. We love how easy it is to eat because everything is in one bowl including the soy sauce. So easy to prepare too! Just cook the rice, prepare the topping by tossing together in a large bowl then season with furikake. Once the rice is cooked, season with sweet vinegar sauce then arrange in a bowl, add the toppings, season with furikake, drizzle with soy sauce-vinegar sauce the top with mayonnaise and hot sauce. Voila! You have California Sushi Bowl.

I am not a fan of wasabe so I used sriracha instead. Aside from Sushi Bake that I made a couple of days ago, this is another easy way to make and eat California Sushi. ​
​I urge you to try this recipe. Because once you do, you will say the same thing my husband and I told ourselves. I will never eat Sushi Rolls anymore and make this bowl instead.

California Sushi Bowl Recipe

Ingredients:
  • 4 cups sushi rice, cooked
  • 1 to 1-1/2 cups imitation crabs, flaked or slice diagonally or cubed
  • 1/2 cup cucumber, diced
  • 1/3 cup carrots, matchstick
  • 1 medium avocado, diced
  • 1 tbsp furikake rice seasoning plus extra for sprinkling
  • 2 tbsp light soy sauce
  • 1 tbsp + 2 tbsp rice vinegar, divided
  • 1/4 tsp salt
  • Japanese mayonnaise for topping
  • Sriracha for topping 
  • pickled ginger on the side

Procedure:
  • Combine crabs, cucumber, carrots, avocado and furikake. Gently toss together until fully incorporated.
  • In a small bowl, stir together soy sauce and 1 tbsp rice vinegar. Set aside.
  • Using a rice spatula, loosen the cooked rice. 
  • In a small bowl, combine 2 tbsp rice vinegar, 1 tbsp sugar and 1/4 tsp salt. Microwave for about 30 seconds or until sugar is fully dissolved. 
  • Pour over the rice and stir until combined.
  • Divide the seasoned rice into four and scoop into bowls. Top with the prepared topping ingredients and drizzle about 1/2 tbsp soy sauce-vinegar mixture. Season with furikake and top with mayonnaise (about 1 tbsp) and sriracha sauce (about 1 tsp).
  • Serve and enjoy. 
  • Makes 4 California Sushi Bowls.
