cathedral window gelatin

Cathedral Window is jelly dessert  made of cubed colored gelatin embedded in a soft, creamy and silky mold.  It is called Cathedral Window because the multi-colored jellies resembles the windows of a cathedral. This is also probably one of the most affordable recipe you can make for the holidays that I know will surely be enjoyed by kids and adults. 
Flavored gelatin were also used for the colored gelatin cubes. Also feel free to add more colors if you like and if you like to use unflavored colored ones, it's up to you. But a flavored one is highly suggested.

​I suggest to use a silicone mold for the recipe. It would be great if you can find a dome-shaped one.  They tend to stick to a metal pan and it will be harder to unmold.  Using silicone molds will be less hassle and no need to loosen up the sides because it  will unmold by itself. 
Also, please note that gelatin brands vary on water requirements. The gulaman brand used on this recipe is Mr. Gulaman. So if you are using another brand, make sure to use your best judgement with dilution instruction.

Ingredients
  • 6 cups water
  • 1 tbsp strawberry flavored gelatin
  • 1 tbsp orange flavored gelatin
  • 1 tbsp buko pandan flavored gelatin
​Milk mixture:
  • 1 can, 12 oz evaporated milk
  • 1 can, 14 oz condensed milk
  • 1 pack all purpose cream  or 1 cup heavy cream
Clear gelatin:
  • 4 cups water
  • 1/2 cup sugar
  • 2 packs (50 g) unflavored clear gelatin
Note: Mr Gulaman brand was used on this recipe. Other gelatin, agar-agar or gulaman brand varies. Please follow packaging instructions.

​​Procedure:
For flavored gelatin:
  • In a bowl, dissolve each flavored gelatin in 2 cups water. Transfer to a sauce pan and cook over medium heat. Bring to a boil. Transfer to containers and cool to set. Cut into cubes. Set aside.
​For the Milk Gelatin:
  • In a large bowl. combine milk ingredients together. Stir until fully combined. Set aside.
For the Unflavored Gelatin:
  • In a pot, dissolve sugar and 2 packs unflavored clear gelatin in water. Cook over medium heat. Continue mixing until mixture starts to boil. Reduce the heat to low.
  • Slowly add milk mixture while continue mixing. Let it come to a  slow simmer then remove from heat. 
​Assembly: 
  • Pour about 1/3 of the gelatin mixture into a mold. Add the some flavored gelatin cubes. Repeat the process until gelatin cubes and milk mixture are all transferred to the mold. 
  • Refrigerate for at least 4 hours to set.​
  • Invert to remove from mold and slice to serve.
