This Chicken Alfredo is creamy and delicious! One the easiest pasta recipes you can make at home with a sauce made from scratch. 

​Store-bought Alfredo sauce in a jar can be used but I suggest to make this homemade sauce. Just heavy cream with no thickening agent. The sauce is very delicious because I boiled the sauce with the chicken cube until it melts. I suggest not to skip the chicken cube. It really adds flavor to the sauce.

This photo below is on resting stage. (I just removed the cover of course for me take a good shot). After adding and stirring the pasta with the sauce, cover and let it rest for about 12-15 minutes. This will allow the noodles to absorb the sauce. It will still be hot and the sauce will be a little more sticky. That's what you want in your Alfredo. Not too runny but not too dry.

Chicken Alfredo REcipe

Ingredients:
  • 1 lb or 16 oz fettuccine pasta or linguine
  • 1 1/2 lbs chicken breast, sliced in half horizontally
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3-4 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 1/2 cups mushrooms, sliced
  • 4 cups heavy cream
  • 1/3 cup fresh parsley, chopped (and more for topping)
  • 1 piece chicken bouillon cube
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • grated parmesan cheese for topping

  • Season both sides of sliced chicken breast with salt and pepper. Set aside. 
  • Cook noodles according to package directions.  Cook it al dente or firm to the bite. Drain  and set aside.
  • While your pasta is cooking, you can start frying the chicken breast. 
  • In a heated large pan over medium heat, melt butter then add oil. Combining the two avoids burning the butter.  Add marinated chicken breast.  Fry until cooked through. Remove from pan and slice diagonally or serving sized you desire.
  • Using the same pan, add onion. Cook until translucent.
  • Add garlic and cook until fragrant.
  • Add sliced mushrooms. Cook until lightly browned.
  • Pour heavy cream. Bring to a light boil.
  • Add chicken bouillon cube and cook for about 8 minutes.
  • Add chicken breasts, fresh parsley, salt and pepper. Stir to combine and cook for another 2 minutes.
  • Add cooked noodles. Stir until noodles are soaked in sauce and fully combined.
  • Turn off heat and cover. Let it rest for 10-15 minutes. This will allow the noodles to absorb the sauce.
  • Remove the cover and stir again to fully coat the noodles.
  • Serve on a plate and top with grated parmesan cheese and fresh parsley if desired.
  • Enjoy.
