COCONUT RICE STICKS

These Coconut Rice Sticks are one of the easiest and budget-friendly snacks to make. With just a few ingredients, you can prepare an amazing treat for you family. So simple and quick yet so delicious!
I love glutinous rice flour. You can make so many recipes out of it. I've made TIKOY, SAPIN-SAPIN, LANSONG, ESPASOL and many other recipes. That's why my kitchen pantry will always have it available.  Yes, I stock up on those and you should because they are not expensive at all. So easy to find in all major Asian grocery stores.

Super easy to make! Here's how. Just combine the dough ingredients and form them into small logs. Fry them in hot oil then coat with caramelized brown sugar. You can sprinkle some sesame seeds or you can even eat it plain without sugar coating. Delicious! 
You may have a question, how about if I do not have desiccated coconut? You can use fresh grated coconut for this one but since it is moist, you might need to adjust on the flour and or water. I have tips below on the consistency of your dough. Make sure to check them out.

These goodies are best served immediately. If you have a family of four, this recipe can only make about 20 pieces so 5 piece each is perfect! If there's a crowd, you can always double or triple the recipe. Try this recipe and let me know what you think by leaving a comment below. Enjoy!

coconut rice sticks recipe

Ingredients:
  • 2 cups glutinous rice flour
  • 1/2 cup desiccated coconut
  • 1/4 cup granulated sugar
  • 3/4 cup warm water
  • toasted sesame seeds (optional)
Caramel Coating:
  • 3/4 cup brown sugar
  • 3/4 cup water

Procedure:
  • In a medium bowl, combine flour and coconut. Set aside.
  • ​In a cup, combine warm water and sugar and stir until sugar is fully dissolved. Add to flour and coconut mixture. Stir using a spatula then using your hands, knead to form a dough. 
  • Scoop about 1-1/2 to 2 tbsp dough and roll to form a log. You can use the palm of your hands to do this Roll into 3-4 inches log. Recipe yields about 20 pieces.
  • In a pan with hot oil, fry the logs until puffy and golden. Remove from oil and drain on paper towels or rack. Set aside.
  • Prepare the caramel coating by combining brown sugar and water on a medium pan. Let it simmer until it caramelizes or color turns rich brown. Quickly coat the rice sticks with caramel and drain again on a rack. 
  • Sprinkle some sesame seeds if desired.
  • Serve and enjoy!

RECIPE NOTES:

  • Make sure the oil is hot enough before adding the glutinous rice sticks. To test the oil if ready, place the tip of a wooden spoon or chopstick on the oil and if bubbles form around it, the oil is ready. 
  • Mixture should form a dough. If it is too crumbly add a small amount of water.  If is it too wet, add flour. Add a tsp at a time. Adjust the flour and water as needed. You should be able to easily form the dough into logs. 
  • The coconut glutinous rice sticks can be eaten without caramel coating. Personally. I like it that way. 
  • Once done, they have to be consumed immediately.
