CREAMY CARBONARA

Carbonara is an Italian dish made with egg, hard cheese, cured pork or bacon and black pepper. It is one of the easiest pasta recipe you can make.
The first time I've tasted Carbonara was when I was in the Philippines. Greenwich restaurant which is a pizza place there serves Carbonara and I love it.
​I called this recipe Creamy Carbonara because the traditional Italian Carbonara doesn't contain cream on it. Also, the traditional Carbonara uses Pancetta (Italian Bacon) but I just used a regular bacon here. Simple and basic recipe that I know you will surely enjoy. Again, this is not that the traditional Italian Carbonara.

I am not a fan of adding ground pepper to my spaghetti so you won't see that on my photo but of course you season yours if you like. I used heavy whipping cream for the creamy sauce but you can substitute that with half and half. If you are from the Philippines, you can try substituting with all-purpose cream but I suggest to use heavy cream if you can find one. It is much creamier and tastes better than all-purpose cream. I also used fresh parmesan cheese on here. My daughter sent me a little block of parmesan cheese from Italy and I just grate them. It is so much better than the grated parmesan cheese you can find in the market.

​Here's how I prepared it. I boiled the noodles and set aside. I sauteed onion, bacon and garlic until bacon is evenly browned then drained excess oil to discard. Using the same wok, I brought the heavy cream, egg yolks and parmesan cheese to a light simmer then added the spaghetti noodles and parmesan cheese then added last the cooked bacon. CREAMY CARBONARA RECIPE

  • 1 lb or 16 oz spaghetti noodles
  • 8 oz or 1 cup bacon cut into strips
  • small onion, chopped
  • 3-4 cloves garlic, chopped
  • 2 cups heavy whipping cream or half & half
  • 3 egg yolks
  • 3/4 cup grated parmesan cheese
  • ground pepper to taste​

Procedure:
  • ​In a large pot, boil water and small amount of salt. I also add a little bit of oil. Cook spaghetti noodles until al dente. Make sure to follow packaging instructions. Remove from heat. Drain and set aside.
  • In a large wok, heat cooking oil and add onion. Cook until onion is translucent. Add bacon and cook until half done. Add garlic and continue cooking until bacon is evenly browned. Remove from heat then strain to discard oil. 
  • Using the same pan, add heavy cream and egg yolks.  Bring to a light simmer. Add parmesan cheese and continue cooking for another 3-5 minutes . Add the cooked spaghetti and stir until noodles are covered with sauce. Turn off heat. Add bacon and season with ground pepper if desired. Stir again until well incorporated. 
  • Transfer to a serving plate and top with more grated parmesan cheese if desired. 
  • Enjoy!
