CRISPY cHICKEN FILLET WITH WHITE SAUCE

This recipe is inspired by McDonald's menu in the Philippines called Chicken Fillet ala King.  Crispy chicken boneless breast fillet drizzled with irresistible creamy white sauce served with hot steamed rice. It is perfect for chicken lovers out there and one of the easiest and delicious comfort food that you can serve your family. 
For a crispy breading, I used Panko Breadcrumbs. I highly suggest to use that instead of the plain breadcrumbs. This delectable sauce only requires simple ingredients that you may have available in your pantry.  No fancy white wine needed to make this elegant dish.

You can garnish with green onions for added color and serve with your favorite side. Either hot steamed rice, mashed potato or roasted vegetables. Which ever you prefer will match this dish. To make, marinate the chicken with listed ingredients below and set aside for at least 30 minutes. Prepare the sauce by combing all the sauce ingredients in a saucepan and cook until it starts to thicken. While simmering the sauce, you can start coating the marinated chicken with breadcrumbs and deep-fry until golden and cooked through, about 4-5 minutes depending on the thickness of the chicken.

Make sure to drain them on paper towels to drain excess oil. Drizzle with your warm creamy white sauce the garnish with green onions if desired.
If you happen to make the sauce first, they will thicken more as it cools. If it's too thick and starts to get cold, you can remedy that by adding a small amount of water or cream and cook again for few minutes. This way you can easily spoon that over the fried chicken fillets.

CHICKEN FILLET WITH CREAMY WHITE SAUCE RECIPE

Ingredients:
  • 1-1/2 lbs boneless chicken breast fillet, about 5 pieces
  • panko bread crumbs for coating
  • green onions for garnish (optional)
Marinade:
  • 1 tsp garlic salt
  • 1/2 tsp ground pepper
  • 2 tsp cornstarch
  • 1 1/2 tbsp all-purpose flour
  • 1 1/2 tsp calamansi or lemon
  • 1 large egg​
​Cream Sauce:
  • 3 tbsp unsalted butter
  • 2  tbsp carrots, chopped
  • 1 pc chicken bouillon cube
  • 1/4 cup all-purpose flour
  • 2/3 cup lukewarm water
  • 1/2 cup evaporated milk
  • 1/2 cup heavy cream or all-purpose cream
  • salt and pepper to taste

Procedure:
  • In a large bowl, combine chicken breast and marinade ingredients. Mix until chicken is well coated. Marinate for at least 30 minutes. 
  • In a medium saucepan, add butter and cook over medium-low heat until melted.
  • Add carrots and saute for about one minute.
  • Combine all-purpose flour and water. Stir well then add into the pan.
  • Add evaporated milk, all purpose cream and chicken cube. Continue mixing until sauce ingredients are well combined and chicken cube has dissolved. Bring to a light simmer then reduce heat to low.
  • Season with salt and pepper to taste. Stir constantly and cook until sauce has slightly thickened. 
  • While sauce is simmering, coat the marinated chicken with bread crumbs.
  • In a pan, heat cooking oil. Fry the breaded chicken breast until golden brown and cooked through, about 5 minutes depending on the thickness of the chicken breast.  Remove from heat and drain on paper towels. 
  • Drizzle warm sauce over fried chicken fillets and garnish with green onions if desired.
  • Serve immediately with hot steamed rice, mashed potato or roasted or steamed vegetables of your choice. 
  • Recipe yields about 5 Chicken Fillets.
  • Enjoy.​ ​
