Pork Hamonado is a Filipino dish made of pork cooked in a sweet caramelized pineapple sauce. It has a perfect balance of sweet, salty and savory with meat so tender. A mouthwatering dish your family will love.

Pork belly is the best part to use. We need the extra fat to make the sauce savory. This recipe to taste good has to be simmered with the sauce for at least 45 minutes. Meat absorbs half of the liquid that makes the meat really tender and tasty. A dish you must try.

Great to serve with hot steamed white rice. You can also sprinkle the top with green onions if desired. ​

pork hamonado recipe

Ingredients:
  • 3-4 cloves garlic, minced
  • 1 small onion, chopped
  • 2 lbs pork belly, cut into cubes
  • 1 cup pineapple juice reserved from from 20 oz can pineapple chunks 
  • 1/4 cup vinegar (I used apple cider)
  • 1/2 cup soy sauce ( I used Kikoman)
  • 3/4 cup water
  • 1 tsp peppercorns
  • 3 pieces bay leaves
  • 2 1/2 tbsp brown sugar
  • pineapple chunks

Procedure:
  • In a pan or wok, heat about 2 tbsp cooking oil. 
  • Saute' garlic and onion. 
  • Add pork belly. Stir and cook for about 15 minutes or until sides of meat start to brown.
  • Add pineapple juice and vinegar. Do not stir . Simmer for about 3 minutes.
  • Add water, soy sauce, peppercorns and bay leaves. Stir and bring to a boil. Lower heat and cook for about 45 minutes or until sauce is reduced.
  • Stir-in brown sugar and cook until sauce is thickened about 5 minutes. 
  • Add pineapple chunks, stir and cook for 1 minute. 
  • Serve with hot steamed rice. 
  • Sprinkle with green onions if desired. 
  • Enjoy.

I made your Pork Hamonado this week, and my hubby who is quite particular liked it! I had never been able to get him to try any kind of meat & fruit dish before.
I used a lean cut of pork because that was what was available, and I cut it in too small a cube (about 1/2"), so the meat was a bit dry, but still delicious! I will certainly make it again, using a fattier piece of pork and, more importantly, cutting the pieces larger (about 1" cube).
I served his with shrimp fried rice and mine over plain steamed white rice.
