Crispy Peach Mango Pie

Peach Mango Pie is a famous pocket pie being sold by a giant fast food chain in the Philippines called Jollibee. It is so good that everyone is hooked up to it. I know nothing can beat Jollibee's Peach Mango Pie because when it comes to their pastry crust and it's crispiness, they are the best!
But how about making your own homemade pie just by using a leftover sandwich or sliced bread? Yes, leftover bread. Super easy to make and delicious as well.
Have you tried my Crispy Tuna Pie recipe yet? If you haven't, then you are missing something. It is as good as this Peach Mango Pie.

Same process just different filling ingredients. For this recipe though, the sugar can be adjusted depending on the sweetness of your mangoes and peaches. Here, I used 1 fresh large mango and 1 can of halve peaches in can. So depending on your mango and if you will be using fresh peaches, then sugar needs to be adjusted as the peaches in can are already sweet. Like I said, use your best judgement on sugar content. You can also use a store-bought Mango Jam and Peach Jam if available. Just giving you options. :)

crispy PEACH MANGO PIE RECIPE

Ingredients:
  • 1 cup mangoes, cut into small cubes (about 1 large mango)
  • 1 cup peaches, cubed, fresh or from 1 can, syrup drained
  • 4-5 tbsp sugar (adjust to preference)
  • 2 tbsp cornstarch
  • 2 tbsp water 
  • 12-15 slices white breads
  • 2 eggs, beaten
  • plain bread crumbs
  • cooking oil for frying

Procedure:
  • In a medium pan, combine mangoes and peaches. Cook over medium heat for about 8-10 minutes or until juice comes out. 
  • Stir-in sugar and continue cooking until soft and slightly mushy and has caramelized. 
  • In a small bowl, combine cornstarch and water. Add to the mixture and cook for another minute of two or until mixture is thick. Remove from heat and cool completely.
  • Trim edges of sliced bread. Flatten with a rolling pin. 
  • Brush all sides of flattened bread with beaten egg.
  • Add about 1 1/2 - 2 tbsp peach mango filling. Roll and seal sides using a fork. 
  • Dip in beaten eggs until evenly coated.
  • Roll in breadcrumbs.
  • Heat cooking oil in a pan. 
  • Fry until all sides are crispy and golden.
  • Remove from oil and drain on paper towels.
  • Serve while warm. Enjoy.
  • Recipe yields about 12-15 pies.
