Filipino Coconut Macaroons

These Filipino-style Coconut Macaroons are soft, moist and delicious! Totally different from the coconut macaroons we have here in the US. Also different from french macarons so don't be confused. The key ingredient in this recipe is unsweetened shredded / dessicated coconut and of course condensed milk
These mini coconut cupcakes are rich and creamy with a sweet, coconutty and chewy texture. Super quick and easy to prepare. Perfect as a snack or dessert that will surely wow the crowd.  But I  must warn you. They are simply irresistible.

I find that they actually taste better the next day. They dry up a bit and becomes more dense which I like. I baked two different batches for this recipe. The first batch was baked at 18 minutes with the top darker in color than the 2nd batch baked for 15 minutes. The latter has lighter top of course but I liked the one baked for 18 minutes. Slightly toasty on top but soft and chewy inside. 
​This recipe yields about 36 pieces. A great recipe for party giveaways, potlucks or add on to your dessert table. A must-try!

Filipino-Style cOCONUT mACAROONS rECIPE

Ingredients:
  • 3 large eggs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1 can, 293 mL condensed milk
  • 1 tsp vanilla extract
  • 3 1/2 cups unsweetened desiccated / shredded coconut
  • melted butter for brushing

​Procedure:
  • ​Preheat oven to 350F.
  • Line mini cupcake pan with mini cupcake liners.
  • In a large bowl, beat the eggs. Add sugar and butter. Beat until sugar is dissolved.
  • Add condensed milk and vanilla extract. Beat until mixture is smooth and well combined. 
  • Stir-in desiccated coconut. 
  • Scoop about 2 tbsp mixture into the prepared pan. Press lightly with the back of the spoon or fork to flatten the top. This will give a nice smooth top and prevents spaces at the bottom.
  • Bake in a preheated oven for 15-18 minutes or until top is golden.
  • Remove from oven and brush with melted butter. Transfer to a wire rack and cool completely.
  • Store in an airtight container.
  • Recipe yields 36 macaroons.
  • Enjoy!
