Silvanas / Sylvannas

Silvanas also spelled Sylvanas or Sylvannas are crunchy cashew-meringue wafers filled and coated with buttercream. A cookie version of Sans Rival. Rich, creamy, melt in your mouth dessert! But I must warn you, they are seriously addicting. Another great recipe you can make if you have extra leftover egg whites after making a delicious dessert Leche Flan or Creme Brulee.

I mentioned those two recipes because they are perfect when it comes to egg count. For the Leche Flan I used 10 egg yolks so make sure to divide the egg whites when separating them. For the Creme Brulee, I used 5 egg yolks so Silvanas is perfect since we will only be needing 5 egg whites. ​

silvanas / sylvanas recipe

Ingredients:
  • 5 large egg whites, room temperature
  • 1/2 tsp  cream of tartar
  • 1/2 cup granulated sugar
  • 1 1/2 cups  ground cashew
  • 1/2 tsp  vanilla extract
  • 1 cup butter, softened at room temperature
  • 3/4 cup  powdered sugar
  • 1 1/2 tbsp milk
  • Marie biscuits or similar,  crumbs

Procedure:
  • Preheat oven to 300 F.
  • Beat egg whites. Add cream of tartar and continue beating until frothy.
  • Gradually add granulated sugar. Beat until soft peaks form.
  • Add vanilla extract and continue beating until stiff.
  • Gradually add the  ground cashew in 3 parts. Fold until well combined.
  • Transfer meringue into a piping bag with the tip cut off.  Pipe into silicone mat or parchment paper making circle or oval shapes. Smooth out the top to remove peaks. 
  • Bake for 25-30 minutes or until lightly browned. Cookies are cooked through if they can be easily be detached from the pan. 
  • In a medium bowl, add softened butter and powdered sugar. Beat until fully combined. Add milk and beat until pale and fluffy.
  • Spread buttercream on a meringue cookie and place another cookie on top of the buttercream. Press lightly to evenly distribute the buttercream filling. Coat all the sides with more buttercream then roll in biscuit crumbs until well coated. Refrigerate for few minutes before serving. Enjoy.
​* Recipe yields about 24 Silvanas
