Caramel Cloud Cake

Cloud Cake. Yes we are calling this recipe Caramel Cloud Cake. It is super white and super light like clouds. Made from just three ingredients. Yes, you read it right. Just 3 ingredients namely egg whites, sugar and cream of tartar.
This idea was adopted from a recipe on YouTube and was tweaked a little bit to make it a little less sweet. It was called Egg White Cake and thought of changing it to Caramel Cloud Cake which I think sounds better. What do you think?

​If you love Brazo de Mercedez or Brazo de Mercedez Cupcakes how the texture of the meringue when you take a bite, then this recipe is right for you. Of course, with the exception of the custard in the middle which is made from egg yolks that was turned into sweet custard. For this one, the caramel on top provides sweetness to this cake. So, this is a great way to make use of leftover egg whites if you happen to make Leche Flan. You can also make Lengua De Gato and Meringue Cookies if you have more. So, do not throw the egg whites away because yhere are plenty of ways how you can turn them into delicious desserts.

caramel cloud cake recipe

Ingredients:
  • 6 egg whites
  • 1/4 tsp cream of tartar
  • 1/3 cup + 1/2 cup granulated sugar
Procedure:
  • Preheat oven at 300 F.
  • In a pot, caramelize 1/2 cup sugar over medium-low heat. Stir occasionally until sugar is fully melted and color turns amber or golden.
  • Transfer the caramelized sugar in a pan. I used bundt pan. Make sure the bottom of the pan is evenly coated. Set aside to cool down.
  • In a large mixing bowl, beat egg whites and cream of tartar until frothy.
  • Gradually add 1/3 cup sugar while beating on high speed. Beat until stiff peak.
  • Transfer into the prepared bundt pan with caramelized sugar.
  • Prepare a larger pan with about an inch of  water. Place the bundt pan over the pan with water. 
  • Bake for for 20 to 25 minutes or until top of meringue turns golden brown. 
  • Remove from oven and cool down a bit. 
  • To unmold, place a plate on top of the pan and invert. 
  • Slice and serve.
