Ginataang Mais or Corn in Coconut Milk is a Filipino sweet snack made from sticky rice, coconut milk sugar and corn kernels. It is also called Lugaw na Mais. They can be eaten warm or cold.

Corn of course is the main ingredient on this recipe. I prefer adding cream corn instead of the whole corn kernels because I find it creamier and I can taste the corn better.  But, it's up to you which one you'd like to use or whichever is available.

Ingredients:

• 1/2 cup glutinous rice
• 2 cups water
• 1 can, 400 ml or 13.5 oz coconut milk
• 1/4 cup + 2 tbsp sugar (adjust accordingly)
• 1 can, 15 oz 432 grams cream corn or whole corn kernels

Procedure:

• Rinse glutinous rice until water runs clear.
• In a pot, combine rinsed glutinous rice and water.
• Simmer to boil until rice is half cooked. Stir occasionally to avoid sticking.
• Add the coconut milk. Bring back to boil.
• Add sugar and stir until sugar is dissolved. 
• Add cream corn and cook for 15-20 minutes or until desired consistency is achieved.
• Serve warm or cold.
• Enjoy.
