Maruya (Banana Fritter)

Maruya or Banana Fritter is a Filipino snack made from saba (cardaba) bananas or plantain coated in light and fluffy batter, deep-fried until golden brown and sprinkled with sugar.  An afternoon treat you can easily make.
​There are two ways how to prepare them. Either slice the bananas lengthwise, dip in batter then fry or mash the bananas and mix with the batter. Either way, they are both delectable! 
The key to a delicious Maruya is the batter and this recipe I prepare is definitely a keeper.

If you are in a hurry and have no time preparing your own batter, you can use a pancake mix to make it. Just follow the packaging instructions how to make pancakes and that's it. Dip the bananas in your pancake batter and deep fry until golden brown.

Maruya ( banana Fritter) Recipe

Ingredients:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tbsp sugar
  • 1 large egg
  • 2/3 cup  milk 
  • 1/2 tsp vanilla
  • Saba or plantain bananas, sliced in half lengthwise
  • cooking oil for frying
  • granulated sugar for topping

Procedure:
  • In a medium bowl, sift flour, baking powder, sugar and salt. Stir to combine.
  • Add egg, milk and vanilla. Whisk until just combined.  Do not over-mix.
  • Let the batter stand or for 10-15 minutes. Why rest the batter? During the resting period, starch molecules in the flour are absorbing the liquid in the batter. which causes them to swell and gives the batter a thicker, more viscous consistency.
  • While waiting, peel the banana skin and slice in half (lengthwise).
  • Dip in batter and coat evenly.
  • Fry in hot oil until crisp and golden. Remove from oil and drain on paper towels.
  • Transfer to serving plate and lightly sprinkle with granulated sugar.
  • Serve and enjoy.
Note: Another method to try, mash the bananas and mix with the batter. Scoop about 1/3 cup batter and fry into hot oil.
