Raffaello is an almond coconut candy popular in Europe. Traditionally made with layers of almond, covered with cream, wafer shell, and coconut flakes. Perfect for those who are a fan of white chocolate. It will be a little costly if we do it exactly like how Ferrero makes them, so this recipe is very easy with just 3 ingredients but the taste is almost similar. 
Yes, just three ingredients and that already includes the whole almond that you will place in the middle.What are the other two? Well, it's only condensed milk and dessicated coconut. That's it. Easy right?

After shaping the coconut balls, you can use a candy wrapper to wrap them or place them pn mini baking cups like how I did. These delicious homemade coconut candy are perfect for after meal dessert or it could be a great dessert for parties as an addition to your dessert table. I think they are lovely when placed on these colorful mini baking cups. What do you think?

Raffaello Recipe 

Ingredients:
  • 1 1/2 cups dessicated coconut
  • 1/2 cup condensed milk, chilled
  • 15-18 pieces whole almond or macadamia nuts
  • dessicated coconut for coating

Procedure:
  • In a medium bowl, combine dessicated coconut and condensed milk. Mix until fully combined.
  • Refrigerate for at least 1 hour or until hard enough to form a ball.
  • Grab a dallop of the mixture, add almond or macadamia nut in the middle and roll using the palm of your hands to form  ball. 
  • Roll in dessicated coconut until fully coated.
  • Place in a candy paper or mini baking cups.
  • Continue until the whole batch is finished.
  • Refrigerate before serving. 
  • Recipe yields about 15-18 pieces.
  • Enjoy.

Hi, did you use sweetened or unsweetened desiccated coconut?
