Sponge Cake

This Sponge Cake is very soft, moist and spongy. It can be used on any cake recipes you'd like to make. Very few ingredients and easy to make. I made a simple here just by dusting it with powdered sugar. But you can top it with custard or any cake frosting you prefer. If you'd like to try my custard recipe, check my Banana Custard Cake and use to top this delicious cake. You can also try my Italian Buttercream Frosting recipe or drizzle with chocolate frosting that I used on my Super Moist Chocolate Cake recipe. Oh, or use my yema frosting from my No-Bake Yema Cake.

I baked this cake using Bain Marie or water bath method. Meaning, the baking pan is placed on a larger pan with hot water on it and then baked at a lower temperature for a longer baking time. This method gives a nice spongy and moist cake.
​The process is also different from my chiffon and sponge cake recipes. The flour was mixed in a hot milk with oil. Cooking the cake flour gives a nice texture on the cake so don't skip that step. I was inspired by this method I found in YouTube. 
You are probably asking, can I use all-purpose or plain flour? Yes but there's a process how to substitute cake flour. See below or check this VIDEO how to make your own cake flour.

Sponge Cake Recipe

Ingredients:
  • 1/3 cup fresh/whole milk
  • 1/4 cup vegetable oil
  • 2/3 cup cake flour *
  • 5 large eggs, room temperature, separated
  • 1 tsp vanilla extract
  • 1/4 tsp cream of tartar (optional)
  • 2/3 cup granulated sugar
  • icing sugar /  powdered sugar for dusting

Procedure:
  • Preheat oven to 300 F. Double-line an 8 x 8 pan with parchment paper.
  • In a small sauce pan, combine milk and oil. Stir and bring to a low simmer. Remove from heat and transfer to a large mixing bowl. Add cake flour through a sieve and sift . Whisk until smooth. Let cool. 
  • Add egg yolks and vanilla. Beat until fully incorporated. Set aside.
  • In a medium bowl, whisk egg whites until frothy. Add cream of tartar (optional) and beat until foamy.
  • Gradually add granulated sugar. Continue beating on high speed until soft peaks form.
  • Gradually add meringue to cake batter and lightly fold using a whisk or spatula. Do not over-mix. 
  • Transfer into the prepared pan. Place the baking pan over a large pan and fill with hot water half-way up the sides of pan.
  • Bake in a preheated oven for 60-70 minutes. 
  • Cool completely before removing the parchment paper.
  • Trim the sides (optional) and dust with powdered sugar or frost if desired.

​Tips and NOtes:

Cake Flour Substitute: 
  • Measure out 1 cup all-purpose flour.  
  • Remove 2 tbsp of all-purpose flour and place it back in your flour canister.  
  • Replace the removed all-purpose flour with 2 tbsp cornstarch.
  • Sift flour 5 times.
​*Sifting the flour and cornstarch together will help thoroughly combine the mixture and help to lighten and aerate the flour.

  • After mixing the flour with warm milk with oil, make sure to let the mixture cooled down before adding the egg yolks. You don't want a scrambled egg in your mixture right?
  • Folding the meringue to the cake batter has to be done properly. Fold a small portion, about a third or less of the meringue into the batter. Fold using a spatula or whisk, by using a flipping motion. Do not stir. You can also use a whisk like I did on the video but you do it lightly or gently and treat your whisk like a spatula. Fold until the foam is just incorporated. Do not over-mix. 
  • I say optional for the cream of tartar because I've made in again without it to experiment and I did not see a difference with the result. But If you have it, might as well use it. Cream of tartar helps stabilize the egg whites.

making this again today for christmas party at tinker air force base tom (request uli nila sa hubby ko ) this cake is so soft ,fluffy and delicious they like this cake thank you miss j for this recipe easy to make and perfect talaga
