yema cake (no-bake)

Yema Cake is a Filipino chiffon cake with a custard frosting known as yema which is a custard-like combination of milk and egg yolks. Light and airy cake with a thick sweet yema sauce. A cake that will surely give you a mouthwatering treat with the cake's softness and delicious frosting.

If you do not have an oven, then this recipe is right for you. A no-bake delicious cake that you can make for your family. Please remember that this type of cake has to be consumed right away. Chiffon is not advised to be refrigerated and the custard is best eaten when fresh. This recipe yields about 6 molds and great to be shared with family and friends.  You can cut the recipe in half if you want.

no-bake yema cake recipe

Ingredients:
​​Cake:
• Wet Ingredients
  • 4 egg yolks
  • 1/4 c water
  • 1/4 c vegetable oil
  • 1 tsp vanilla
• Dry Ingredients
  • 1 cup all purpose flour
  • 1/2 c sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp powdered milk ​
Meringue:
  • 8 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 c sugar
Yema Filling:
  • 4 egg yolks
  • 3/4 cup evaporated milk
  • 1/2 cup all purpose cream or heavy cream
  • 1 tbsp cornstarch
  • 1 can, 250 ml condensed milk
  • 1 tsp vanilla
  • 3 tbsp butter

Procedure:
  • In a bowl, mix all wet ingredients. 
  • Sift all dry ingredients into the wet ingredients. Mix well until combined. Set aside. 
  • In another bowl, beat egg whites.  
  • Add cream of tartar. Beat until egg whites are frothy.
  • Gradually add sugar. Beat until soft peak.
  • Gently cut and fold the meringue into the cake batter until well combined.
  • Transfer into llanera mold or pan. Lightly tap the pan to remover air bubbles. Cover with foil.
  • Steam over medium heat for 15 to 20 minutes. Remove from molds and cool on wire rack.
  • Prepare Yema filling. In a pot mix all the ingredients (except butter). Whisk until well combined. Cook over low fire until thick. Turn off heat then add butter and continue stirring until butter is fully dissolved. Remove from heat and let cool. 
  • Spread yema to the cake. Top with grated cheese.
  • ​Enjoy.
