Sweet Cheese rolls

Pillowy soft, buttery, and fluffy homemade sweet buns filled with a slice of melty cheddar cheese, brushed with butter on top and sprinkled with sugar. A recipe perfect for breakfast or snack served with coffee, tea or soda. Recipe is similar to Filipino Ensaymada except this shape is more simple and has cheese inside.
​If you have baked my other bread recipes before, this recipe will be super easy for you. I only made a small batch for this recipe and made the rolls pretty big like twice the size of Pandesal.

Let's talk about the yeast. Many have asked me what yeast I use. I always use instant yeast but I still activate it. Why? I wanted to make sure that my bread will be successful when I bake it and with my experience, I always get a good result when I activate the yeast than just mixing the instant yeast with the dry ingredients. So, active dry or instant dry, I activate it. Please read this article I wrote "Perfectly Activated Yeast". It will guide you with the step by step process. Also, if you are first time or just learning how to bake, check this other article I also wrote "How to Bake Bread with Success". My tips will help you bake with confidence.

Sweet Cheese Rolls REcipe

Ingredients:
  • 1/4 cup lukewarm water (105 F-120 F)
  • 1 pack or 2 1/4 tsp yeast
  • 1/2 tbsp granulated sugar
  • 1 1/2 cups + 4 tbsp or more all-purpose flour, divided
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 2 tbsp milk, warm or at room temperature
  • 1/4 cup unsalted butter, softened plus extra for brushing and topping
  • milk for brushing the rolls
  • granulated sugar for dusting
  • flour for dusting

Procedure:
  • ​Activate yeast by combining lukewarm water, yeast and sugar in a small cup or bowl. Stir and let rest for 5-10 minutes or until it bubbles (double or triple in size).
  • In a mixing bowl. combine 1 1/2 cups all-purpose flour, sugar, and salt. Stir to combine. 
  • Add eggs, milk and activated yeast. Mix until ingredients are fully incorporated. 
  • Add butter 1 tbsp at a time while kneading by hand or using stand mixer (speed 4). 
  • Add flour (about 1/4 cup) 1 tbsp at a time while continue kneading until the dough becomes smooth but still slightly sticky.
  • Transfer the dough into a greased bowl . Cover and rest in a warm place for 1-2 hours or until double in size.
  • Punch down dough to release air packets. Transfer to a floured surface, roll into a log and divide equally into 8 or 10 pieces.

Flatten each dough with a rolling pin. Add a piece of cheese and roll up. 
  • Place the rolled dough (end or sim at the bottom) onto a lightly greased pan or lined with parchment paper. 
  • Cover and let rise for another 30 minutes. Dough should expand more.
  • Lightly brush with milk the bake in a preheated oven at 350 F for about 20 minutes or until top is golden.
  • Immediately lightly brush with butter while still warm. 
  • Cool completely then spread a good amount of butter on top and sprinkles some sugar.
  • Serve and enjoy.

Thank you for the recipe! I appreciate you sharing it. I made this 2 times already. Used my son’s left over mozZa sticks for the filling the first time. So it was kinda rubbery after a day or two. The bread was soft but it burned a little in the oven for 15 mins baking time. So the 2nd time around I only baked it for 12 mins, used cream cheese and it turned out great. Also this time, I doubled all measurements to make a bigger batch. My question is, for the yeast, do I have to double the amount too? I mean I did it but was wondering if I can do with only the measurement for one batch. Thanks again for sharing your recipes! By the way I also used the same dough for my pan de coco but used a different recipe for filling and it turned out great! Salamat!

Hi, I apologize for the late response. For some reason I didn't get a notification on this one. I am glad that you tried it. Oven temp varies that's why it is always good to check before the set time. To double you don't need to double the yeast. You can proof the yeast to 1/2 cup water instead of 1/4. That's good that you tried this with pan de coco. I have a recipe for that if you search my tab under bread and baking and use my recipe search bar. You might like it too. Hello, I want to try to make this but I’m not sure what type of cheese is good to use and will not dissolve when baked or leave a hole in the middle after baked. What type of cheese and brand did you use? I live in Toronto, Canada and i’m not able to get eden cheese brand.. what other brands do you suggest that will work. Thanks
