ube cheese pandesal

​Ube Cheese Pandesal has been trending lately so I thought of making one. I cannot count how many times I have made the traditional Pandesal so making this is not actually not hard at all.

​I used my famous Pandesal recipe and just added McCormick Ube extract which I highly recommend because of it's real ube flavor. And of course cheddar cheese in the middle is perfect for this delicious bread.

​ube cheese pandesal

Ingredients:
  • 3 1/4 cups all purpose flour or more
  • 1/4 cup lukewarm water
  • 1 pouch or 2 1/4 tsp rapid rise yeast 
  • 1/2 tbsp sugar
  • 1 egg, beaten, room temperature
  • 1 cup evaporated milk 
  • 3 tbsp unsalted butter, softened
  • 3 1/2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp ube flavor extract
  • extra flour for kneading 
  • cheddar cheese, cubed
  • plain bread crumbs for coating

Procedure:
  • Add yeast and 1/2 tbsp sugar in warm water (110-115°F). Stir to dissolve and let stand for 10 minutes. Set aside. Click here for procedure & tips for a successful yeast.
  • While waiting for yeast to bubble, place milk, butter, sugar, and salt into a microwave-safe bowl/cup or saucepan. 
  • Microwave for around 1 minute or heat over low heat on the stove. (Mixture should NOT be over 115°F or feels hot to the touch, you’ll need to let it sit a few minutes to cool down.)
  • In a mixing bowl, combine 2 cups flour, egg and yeast mixture. Mix on level 2 with dough hook to combine.
  • Once the milk mixture has cooled enough, add it to the flour/egg/yeast mixture. 
  • Add the ube extract.
  • Continuing on speed 2, gently add another 1 1/4 cup of flour then add 1 tbsp at a time (if needed.) Continue mixing until a dough is formed and clean sides of bowl.
  • Form the dough into a ball and transfer the dough to a lightly oiled bowl, cover with a damp cloth or food wrap and let it rise in a warm place for at least an hour.

  • After rising, punch down the dough to release air packets and transfer onto a lightly floured surface or baking mat.
  • Use a dough slicer to divide the dough into 2 equal parts.
  • Roll each part until it forms into a log. Cut each log into equal pieces.
  • Take 1 piece of dough, flatten with your fingers then add the cheese in the middle. Gather edges to seal and form small dough balls, coat with bread crumbs and place on baking sheet or in a well-greased pan or lined with parchment paper. (ugly side down).
  • Cover the tray or pan with a damp cloth or food wrap and let it rise for at least  20-30 minutes.
  • Preheat oven to 350 degrees F.
  • Bake for 18-20 minutes.
  • Serve immediately.

Notes:
  • If mixer is not available, follow all the steps but use a large bowl to mix the ingredients and knead the dough by hand on a floured surface. 
  • Oven temperature varies, please check before the set time, say in 15 minutes. Please read my article about "How to Bake Bread with Success".
  • You can use active or rapid rise yeast. Rapid rise doesn't need to be activated or be bloomed but I still activate it to make sure. Water temperature is very important when preparing yeast. If you would like to learn how to properly proof the yeast, please read my article "How to Activate Yeast ."

I used quick melt and it also dissappeared. Baka di dapat quick melt. Nawala ung cheese sa ube cheese pandesal and had to label them as ube pandesal instead. 😂😂😂

Yes you can. But you can also make it a day before. The breast is still soft the next day. Just warm it up in the oven for few minutes before serving.

Maybe too much ube extract,McCormick is to strong flavor.try to lessen your extract flavor,if you want dark color ube you can used powder form flavor available at any sar-sari store.Para magrise ang yeast warm water or warm evap.milk and 1T.sugar.Thank you...just sharing....God bless.

Sa mga nakakatikim ng bitter after taste ano ginawa nyong adjustment para mawala? Meron din sakin. mccormick ang gamit ko at 1bottle yung nagamit ko as per recipe.

Yes, but please take note that evap milk has half less water than fresh milk meaning fresh is more diluted so you will might need to adjust with the flour and check your dough consistency.

I actually use instant yeast and still activate it to make sure. It give me good result every time than just mixing with the yeast with the dry ingredients.

After mixing the dough and yeast mixture, is there a possibility that I over-knead the dough with my mixer (Kitchenaid Professiona)? I was waiting for the bowl to be 'clean' on the sides and it felt like the dough was a little tough...

You probably added too much flour. If the dough has the right consistency, it will clean the sides but the dough will still be a little sticky but smooth and elastic. When adding extra flour, make sure to add about 1 tbsp at a time.

I only added 1 tbsp actually. It turned out really well, my family loved it. I put ube halaya and cheese as a filling but some of them didn't like the cheese (I used Kraft singles, not really a good choice as it was salty). I will definitely try a different cheese next time. And I have to say that left overs were still soft after we reheated them in the oven toaster. I will definitely use this recipe again. :)

I think powder needs to rehydrate. I am not sure. I haven't used one. What you can do is add ube halaya as a filling instead. Place it next to the cheese.

Eden Cheese can be found in Filipino grocery stores if you live close to one of their branches. I haven't tried Velveeta cheese on Pandesal and I think if I am not mistaken, they melt pretty quick isn't it?

I see. This recipe yields about 15 pieces so a small bar can do but I suggest to get the big one if you can because you can use that when making other recipes here like cheese cupcakes, Taisan, Mamon etc.

Hi. Always love your recipes and videos just by looking at them!! Newbie in baking.. I noticed in your written recipe, sugar wasn’t mentioned in the first step with the yeast. I didn’t put any :( When I watched the video, and read again the tips in activating yeast, that’s when I realized.

Yes, sorry for the typo. The 1/2 tbsp is for the yeast but not really a big deal if you add or not. I have read that sugar feeds the yeast during blooming but it's okay without. I will correct the procedure. Thanks for noticing.

Do not let the dough rest for 24 hours. Rising more than 2 hours will make the dough smell and taste yeast due to over-rising. Room temp about 100 degrees is perfect.

I tried this recipe and I am happy with how the bread turned-out :)

However, I didn't like the pandesal using ube extract. I tried using ube yam from grocery store and Good Shepherd (checkout SPEW Facebook page). The latter is the best option. The bread still got the hue from ube yam. I couldn't wait to try this recipe using real ube.

I also tried using cream cheese, quick melt and cheddar. Definitely will not recommend using quick melt or adding a lot of cheese.

Yes, Mccormick is not just food color, it's ube extract. What I advise is also spread some ube halaya inside if you like.

Yes, that's how you will achieve the ube color. 2 tbsp is 1 bottle of McCormick.

Hi! Tried your recipe twice! First try i used a different brand of ube extract and the bread did not taste like ube but more of like the normal pandesal. Second try i used the mc cormick, the color is better but i still dont taste the ube on the bread. Adding ube halaya compensates but can you suggest a way for the bread alone to taste like ube? :( or what could i have done wrong? I believe that the recipe, even without the halaya as filling will taste like ube so pls help :(( (i used 2 tbsp of ube extract)

Hi. I haven't tried incorporating the ube jam when making the dough. Right now I can only suggest to add the ube jam as filling. I am not sure if ube powder will work when added with the dry ingredients Ube powder needs to be rehydrated and will require more water.

Hi po. I tried this recipe usi g mc cormick brand and eden cheese as well, but i have notice when the gets cooled the filling turned into bluish as well as the cheese nahawaan ng konting kulay.
Ano po kaya ang problem bat nag ka ganun? The texture is ok soft.

Hmm sa akin naman hindi as you can see sa video at photo. Baka sobra sa ube or kulang pa ng konti sa flour at wet pa ang dough mo.
