Tortang Sardinas ( Sardines Omelette)

Easy recipe and budget-friendly dish? This is it! Just 2 cans of an inexpensive sardines can be turned into a delicious omelette with just additional few ingredients. Tortang Sardinas or Sardines Omelette is super easy to prepare and ready in less than 30 minutes.
​Plain sardines can be used to make this but I preferred to use the flavored ones (pictured below). I combined two different kinds with one being spicy and the other one with black beans. Super tasty! 
But it's up to you whichever is available in your pantry.

The good thing about this recipe compared to other recipes out there is I did not drain the sauce. Let's not waste food here and besides we would like the sauce from the can. It has the flavor in it, why toss it right? Your question maybe is, then it will be too runny with the sauce and the eggs. My answer is no, because I added a small amount of all-purpose flour that served as a binder. That way it will be easy to fry and flip it during cooking.  Got it? Trust me you will love it.

The picture above shows that I served it with ketchup. Yes for us in the Philippines banana ketchup is the best pair for this. It's just a perfect match and nothing else. So, have your ketchup and hot rice ready! Enjoy.

tortang sardinas recipe

  • 2 cans (5.5 oz) sardines, plain or flavored 
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • 2 eggs
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1/4 cup chopped green onions
  • 2 tbsp all-purpose flour
  • cooking oil for cooking

Procedure:
  • In a small pan, heat about 1 tbsp cooking oil and saute garlic and onion. Cook until onion is soft. Remove from heat and set aside.
  • Open the cans of sardines and transfer to a bowl, break the sardines into small pieces. Do not mash. Set aside.
  • In  a small bowl, beat eggs. Season with salt and pepper. Add all purpose flour and whisk until smooth.
  • Add sardines, sauteed garlic and onion, and green onions. Stir mixture until just combined.
  • In a pan, heat cooking oil. Scoop about 1/3 cup sardines mixture into hot oil and pan fry over low heat until bottom turns golden, about 2 minutes. Flip and cook the other side for an additional 1 1 /2 minutes or until golden. Remove from pan and drain on paper towels. 
  • Repeat process on remaining mixture. Recipe yields about 7 pieces sardines omelette.
  • Serve with ketchup. Banana ketchup is highly suggested. 
  • Enjoy.
