ube palitaw sa latik

Palitaw is small flat sweet rice cake. A Filipino snack or merienda ​made with glutinous rice flour, grated coconut, toasted sesame seeds, and sugar. 
This sticky, chewy snack is very easy to make and budget friendly. And for this recipe, we will make it more delicious by adding ube flavor to our rice dough and latik in sauce with lanka or jackfruit.

ube palitaw sa latik recipe

Ingredients:​
For Palitaw Dough: 
  • 2 cups glutinous rice flour
  • 3/4 cup water
For Latik (curd coconut cream):
  • 1 cup coconut cream 
For the sauce:
  • 2 cups water
  • 1 cup sugar
  • 1/2 cup jackfruit (langka)
  • 2-3 pieces pandan leaves
  • 1 1/2 tsp ube flavor/essence

Procedure:
  • Combine glutinous rice flour and water. Mix until it forms a dough.
  • Add ube flavor and stir until desired color is achieved.
  • Shape into balls and flatten to make a disc. Set aside.
  • Make latik by cooking coconut cream in a pan over low to medium heat.
  • Continue cooking until milk turns into solid and oil separates. Stir occasionally and cook until golden. Remove from pan and strain to remove excess oil. 
  • Return the latik in the pan  Stir and bring to a boil  and until sugar is dissolved. 
  • Drop pieces of palitaw discs and cook until discs starts to float.
  • Add pandan leaves and langka.  Bring back to a full boil about 2 minutes.
  • Transfer to a serving plate.
  • Enjoy! 
  • Recipe yields 20-25 pieces ube palitaw.
