The fizz of the 7UP and zing of the lemon, drizzled with glaze makes this cake irresistible. One of the easiest cakes you'll make too! With just a few ingredients you may already have in your kitchen pantry, you'll create this beautiful treat that you can serve in any occasion.

There's no need to use baking powder or baking soda. 7Up will act as leavening agent. For the cake batter, all you need is flour, butter, eggs, 7Up, and lemon juice. You can omit the glaze if you like and just dust it with powdered sugar.  The simple glaze is just made from powdered sugar (also called confectioners sugar or icing sugar ), mixed with some lemon juice and milk.

7up bundt cake recipe

Ingredients:
  • 1 1/2 cups unsalted butter, softened at room temperature.
  • 2 1/2 cups granulated sugar
  • 5 large eggs, room temperature
  • 2 tbsp lemon extract
  • 3 cups all-purpose flour
  • 3/4 cup 7Up
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 1/2 tbsp lemon juice

​Procedure:
  • Preheat oven to 325F / 160C). Generously grease a 9-cup bundt pan with vegetable oil or butter. Set aside.
  • In a large bowl, beat butter until creamy. Add sugar then beat until light and fluffy. 
  • Add eggs, one at a time, beating well after each addition. Add lemon juice and beat to combine.
  • Gradually add the flour, 1 cup at a time beating well after each addition.
  • Add 7Up, half or third at a time blending well after each addition. 
  • Transfer the batter into the prepared pan. Smooth the top with a spatula.
  • Bake for about 60-75 minutes or until toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool for about 10 minutes. Loosen edges with a metal spatula then invert the pan then transfer to cool completely on a wire rack.
  • For the glaze, sift the powdered sugar then add the juice and milk then mix well until smooth. Adjust the recipe as needed or depending on the glaze consistency that you prefer.
  • Using a spoon or sauce dispenser, drizzle the glaze over the cooled cake.
  • Enjoy!
